This Corn & Feta Salad recipe isn’t Greek, but it does remind me a little of my time in Greece every time I take a bite of that delicious Feta cheese!

I feel like I never really appreciated Feta until I ate it in Greece…I have basically been missing out for my entire life!

Corn & Feta Salad Recipe

Ingredients

  • 2 cans (15 oz each) whole kernel corn, drained
  • 1 dry pint grape tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 4 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon hot sauce
  • 2 teaspoons dried basil
  • 1/4 cup feta cheese

Directions: 

In a large bowl, add corn, tomatoes, cucumber and red onion. Stir well to combine.

In a small bowl add olive oil, salt, pepper, hot sauce and basil. Stir well to combine and let set for 10 minutes. Pour dressing into bowl and mix well to coat. Serve topped with feta cheese.

To make ahead, refrigerate until ready to serve. Then top with cheese just before serving.
