    Rainbow Cupcakes Recipe

    While driving to dinner the other night, my friend Bri and I saw a double rainbow ahead of us. It was so exciting! I can't even remember the last time I saw a COMPLETE rainbow, let alone a double rainbow at the exact same time!

    It was pretty crazy, and we took it to mean that good luck was definitely coming our way. Of course, after seeing that double rainbow, I wanted to share this adorable little Rainbow Cupcakes Recipe with you guys!

    Rainbow Cupcakes

    You can make this Rainbow Cupcakes Recipe with or without M&Ms, it's really versatile and fun to make - and it's really perfect to make with the kids on a Saturday or Sunday afternoon for dessert that evening!

    Rainbow Cupcakes Recipe

    Cupcake Ingredients

    • ½ C. butter, softened to room temperature
    • 1 C. sugar
    • 2 large egg whites
      2 tsp. vanilla extract
    • 2 teaspoon baking powder
    • 1 ½ C. flour
    • ½ tsp. salt
    • ¾ C. milk

    Directions 

    Preheat the oven to 375 degrees.

    Combine the softened butter, sugar, egg whites and vanilla mixing well. Slowly fold in the flour, salt and baking powder. Lastly, add
    the milk continuing to stir.

    Pour into greased muffin tins (or liners) and bake 20-25 minutes. Insert a toothpick around 20 minutes and if it comes out clean the
    cupcakes are done.

    *Makes approximately 12 cupcakes

    Rainbow Cupcakes Recipe

    Rainbow Cupakes (Wilton store bought kit)

    • 1 Wilton rainbow cupcake kit - the was in the Wilton aisle at my local Walmart store
    • white frosting
    • blue food coloring
    Rainbow Cupcakes Recipe

    Directions 

    Add a few drops of blue food coloring to the white frosting and mix well. Generously frost each cupcake and set aside.

    Open the Wilton Rainbow kit and carefully bend the rainbow candy one at a time and place on top of the cupcake, gently pressing down.

    Next, take 2 cloud candies for each cupcake and place them next to the rainbow on either side. You might need a little bit of extra frosting
    to make them stick.

    *Makes 12 Cupcakes. 1 cupcake = 1 serving

    M&M Rainbow Cupcakes 

    • 1 9.9 oz package of M&M'S
    • 1 package of mini marshmallows
    • white frosting
    • blue food coloring
    Rainbow Cupcakes Recipe

    Directions 

    Add a few drops of blue food coloring to the white frosting and mix well. Generously frost the cupcakes with the blue frosting and set
    aside.

    Open the M&M's and make a rainbow on top of each cupcake - red, orange, yellow, green and blue. Use a pair of kitchen scissors to gently cut the ends of each mini marshmallow and place them on the cupcake as the base of the rainbow.
