    Sausage Breakfast Quesadillas Recipe

    These Quick And Easy Breakfast Quesadillas Recipe is really good, and as the name suggests, they are actually quite easy to make even on the busiest of weekday mornings!

    Quick And Easy Breakfast Quesadillas

    I took a classic quesadilla - a grilled tortilla - and filled it with my favorite breakfast foods! A breakfast quesadilla is a fun new twist on a breakfast burrito. Instead of wrapping the eggs, you just fold them in the tortilla and grill it.

    There are a lot of different ways to customize and change breakfast quesadillas, too. Fill it with eggs and bacon, eggs and sausage, or add some hashbrowns.

    If you enjoy the standard breakfast of scrambled eggs (with cheese, of course) and toast, then you'll love these quesadillas. Just like it's fun to shake things up a bit sometimes and make steak and eggs or biscuits and sausage gravy, this is a fun twist on a classic recipe.

    How to Make Quick Breakfast Quesadillas

    After you make it once, you'll have this easy breakfast recipe memorized!

    Ingredients you will need to make Breakfast Quesadillas

    • 1 large burrito size flour tortilla
    • 4 eggs
    • ¼ cup chorizo sausage cooked and drained
    • ¼ cup shredded cheese
    • sour cream
    • salsa
    • chopped fresh cilantro

    Directions for how to make Breakfast Quesadillas

    Here are some step-by-step photos so you can see how I made these easy egg and sausage quesadillas.

    First, place the eggs into a small skillet and scramble well.

    Cook over medium heat, stirring frequently until nearly cooked. 

    Place flour tortilla into a large skillet and add eggs on top, sausage and cheese.

    Makes sure you add LOTS OF CHEESE!

    Heat over medium heat, covered.

    Once bottom of tortilla is browned and cheese is melted (the lid helps to melt the cheese), flip in half and remove from pan.

    Let stand 1 minute before slicing into 4 triangles. Top with chopped fresh cilantro and serve with salsa and sour cream.

    How Many Eggs Should I use for this recipe?

    I used four eggs because two just seemed skimpy, but by the time you fold it in half, it's a nice thick quesadilla. If you want a thinner one, use two eggs per large tortilla.
