    Because what is fall without a little pumpkin? It’s nothing, guys. NADA. We don’t really have fall in Miami. It’s summer 362 days a year – we do get a few days here and there where we can wear boots and scarves, but mostly it’s so hot that you break into a sweat checking the mail.

    When the rest of the country is posting pictures of the changing of the leaves in their hometowns, we are on the beach. Sweating. So we need things like Pumpkin Spice in all forms to make us feel like we have a fall too.

    How to Make This Pumpkin Spice Crumble Recipe

    Crust Ingredients for making this Thanksgiving Pumpkin Crumble Cake Recipe

    • 1 box of spice cake mix, reserve 1 cup of cake mix for the crumble topping
    • 1 egg
    • ½ C. butter, melted

    Filling Ingredients 

    • 15 can of pumpkin
    • 2 large eggs
    • ½ C. sugar
    • ¼ C. packed brown sugar
    • 2 teaspoon cinnamon

    Crumble Topping Ingredients  

    • 1 C. of spice cake mix (reserved from above)
    • ½ C sugar
    • ¼ C. butter, melted
    • 1 teaspoon cinnamon

    Directions for making this Thanksgiving Pumpkin Crumble Cake Recipe

    Preheat the oven to 350 degrees and spray an 8x8 or 9x9 baking dish with non-stick spray.

    Combine the Crust Ingredients: spice cake mix, 1 egg and ½ cup of melted butter.

    Spread in the baking dish (see photo).

    Pumpkin Spice Crumble Recipe

    Combine the Filling Ingredients: canned pumpkin, 2 large eggs, ½ cup of sugar, ¼ cup of packed brown sugar and cinnamon.

    Pour over the crust (see photo).

    Combine the crumble topping ingredients: 1 cup of reserved spice cake mix, ½ cup of sugar, ¼ cup of melted butter and cinnamon (see photo).

    Spread evenly over the top of the filling mixture (see photo).

    Pumpkin Spice Crumble Recipe

    Bake 40-45 minutes. Insert a toothpick around 35-40 minutes. If it comes out clean the crumble is done.

    Allow to cool completely prior to cutting and serving. Best stored in the fridge as it will get soft if left out.
