    Pulled Pork Mexican Casserole Recipe

    Summertime means back yard barbecues, long lazy days on the beach, but mostly in our case, it means family togetherness. Angeline and I are always looking for new ways to spice up dinnertime - or just make dinnertime easier and more convenient, and Curly's BBQ has played a huge role in making mealtime easier. We've been eating Curly's BBQ for years, and it's been so much fun coming up with new ways to enjoy their products! Our latest Pulled Pork Mexican Casserole Recipe utilizes the sauce less pulled pork variety, which cooks in the microwave in just a few minutes. We've used it in everything from macaroni and cheese to this super fun Pulled Pork Mexican Casserole Recipe - it's one of those dishes that we can throw together in a matter of minutes and enjoy for a few days.

    Pulled Pork Mexican Casserole Recipe

    Ingredients

    • Ingredients
      • 1 package Curly's Sauceless Pulled Pork
      • 2 cups rice (either white or brown rice will do)
      • 10 ounces diced tomatoes and green chilies (undrained) - I used Rotel for this
      • 2 cups sharp cheddar cheese (shredded)
      • 1 can (16 ounces) black beans
      • sour cream for garnish

    Directions

    Preheat oven to 350 degrees. Cook Curly's BBQ sauceless pulled pork according to package directions. Cook rice according to package directions (I used boil in the bag rice).

    Add the rice to your casserole dish, then layer black beans, ½ a can of the tomatoes/green chiles, ¼ cup of cheese.

    Layer the Curly's Sauceless Pulled Pork, the remaining amount of tomatoes/green chiles, then the rest of the cheddar cheese.

    Bake at 350 for about 20 minutes, until everything is cooked through!

    Top with sour cream if so desired!
