How to Make this Paleo Banana Chocolate Chip Muffins Recipe
This recipe makes about a dozen muffins, depending on the size of the bananas you use. It takes 5 minutes to prep everything and 15 minutes for them to bake.
Ingredients
All the exact measurements are in the printable recipe card at the bottom of this post. First, here is what you'll need from the store.
- Almond butter
- Ripe bananas, mashed
- Large eggs
- Vanilla extract
- Baking soda
- Dark chocolate chips (or more if desired)
Directions
If you're a visual learner, here are some step-by-step pictures showing you how to make these easy and healthy breakfast muffins.
Preheat oven to 400 degrees F. Place baking cup liners in muffin or cupcake pan, or lightly grease the pan cups.
Place all ingredients (except chocolate chips) into a large bowl and mix well to incorporate. Fold in chocolate chips.
Spoon batter into cups of prepared pan until each cup is about ⅔ full and sprinkle a few extra chocolate chips on top for a little bit of chocolate, and of course - for the presentation!
Bake in preheated oven for 12-15 minutes or until toothpick inserted in center comes out clean.

Can you use peanut butter?
I would stick with a runnier nut butter (like almond butter). I substituted peanut butter previously and it wasn’t as moist as the original recipe.
