    This Spanish Style Cauliflower KETO Rice Recipe results in a really tasty side dish that has an amazing texture - we all know that cauliflower never really, really tastes like rice, or feels exactly like it!

    But this dish actually resembles it AND because it is so packed full of flavor, you will find that you do not miss the traditional version of rice at all! Especially when you are feeling great from those extra veggies and are inline with your weight-loss or maintenance goals!

    While I do not usually share that many low carb recipes, I keep telling myself that I need to get into the habit, because I have been following a low carb lifestyle ever since I found out about the Atkins Diet almost 20 years ago!

    I don't follow low carb constantly, I definitely stray some years, but I have always found that once I get back into the habit, the weight drops off so quickly compared to a lot of other diets!

    How To Make Cauliflower Spanish Rice

    Ingredients

    • Head of cauliflower, pulsed in a food processor until rice-like
    • Tomato, diced (do not drain juice)
    • Onion, diced
    • Garlic cloves, minced
    • Lime juice
    • Chili powder
    • Chipotle chili pepper powder
    • Salt
    • Cayenne pepper
    • Cilantro, chopped

    First, dice the onion.

    In a medium skillet over medium heat, sauté your onions and garlic in 1-2 teaspoons olive oil for 2 minutes. 

    Add your Cauliflower to a food processor and process until it is rice-sized.

    Add in your cauliflower to the skillet and cook until it is slightly browned.

    Add in your tomatoes, lime juice and spices into the skillet and cook for approximately 5-7 minutes. Lastly, fold in the fresh cilantro.
