I love sweets, especially baked goods. Some people love cake, some love fudge, some love pie - me, I love cookies! I'm a regular old cookie monster, except I don't waste any crumbs when I eat my cookies! While there are some store-bought cookies that are pretty good, I have always preferred homemade, and I've spent a lot of time experimenting with different recipes. This Lime Soft Cookies recipe given to me by my friend Merissa at Little House Living embodies everything I love about cookies; they're soft, chewy and so easy to make!
You can use bottled lime juice or fresh in this lime soft cookies recipe, whatever floats your boat! Our neighbor has a key lime tree that used to hang over into our yard, but after putting up a new wooden fence, it's been trimmed back...I seriously can not wait for it to regrow so that I can grab a few key limes!
When I saw that the fence guys had trimmed the limbs that hung over into our yard, I was so upset. I've been helping myself to those key limes for years!
I can't wait to try this recipe again with key lime juice...
You could also use lemon juice or even Meyer lemon juice. Yum, right?
Lime Soft Cookies Recipe

Lime Soft Cookies Recipe
Ingredients
- 2 teaspoons Lime Juice
- ⅓ cup Milk
- ½ cup Butter
- ¾ Sugar
- 1 Egg
- 1 ¾ cups All Purpose Flour
- 1 teaspoon Baking Powder
- ¼ teaspoon Baking Soda
- Glaze:
- 1 Tablespoon Lime Juice
- 1 ½ to 2 cups Powdered Sugar
Instructions

In a small bowl, mix together the lime juice and milk and set aside to curdle. In a large bowl, mix the butter and sugar. Add in the lime juice mixture and mix well.

Add in the egg, flour, baking powder, and baking soda. Mix until the batter is a smooth consistency.

Drop by teaspoonful onto a greased cookie sheet and bake for 8 minutes at 350 degrees or until the cookies begin to brown slightly. Remove from the oven and let the cookies cool before glazing.

To make the glaze, mix the lime juice and powdered sugar together in a small bowl. Drizzle over the cooled cookies and enjoy!
For an extra special treat, you can whip up a batch of strawberry key limeade slushies to serve alongside this lime soft cookies recipe. It would make for the perfect snack on a warm spring day!
