What Are Oatmeal Banana Cookies?
This is a super-quick and easy recipe that you can memorize because it only includes two ingredients - oatmeal and bananas. It's pretty surprising how well they baked with just two ingredients.
These are high-fiber, whole-grain cookies. Since I used whole ingredients, they qualify as paleo-friendly cookies. They are not Whole30 or keto because they have too many carbs and use grains.

How to Make 2 Ingredient Banana Oatmeal Cookies
Honestly, you can probably guess how to make these cookies! But I included all the steps and ingredients for you anyways.

As you can guess, this recipe uses just two ingredients:
- Quick Oats
- Over Ripe Bananas

Directions
Here is a quick overview of the recipe, along with some step-by-step pictures so you can see how I made them.
First, preheat the oven to 350 and spray a Cookie Sheet with non-cook spray or line with parchment paper.
Add both of your ingredients to a medium sized bowl.
Mash and Mix them together until they are well blended.
Place 1 inch spoons of mixture on to prepared pan, and slightly press down on each Cookie.
Bake for 15-25 minutes (oven times will vary).

Feel free to toss in nuts, chocolate chips, cinnamon - anything that you personally enjoy! Think of it like how you like your breakfast oatmeal or oatmeal cookies!
How To Store Cookies
These are soft cookies. I suggest storing them in an airtight container at room temperature for up to three days.
You can also store them in the refrigerator or freeze them. They will stay fresh in the freezer for up to six months.

I am nibbling one of the cookies as I type. They were SO easy to make, I didn't add anything. I two larger medium super ripe bananas and Quaker Quick Cook Oats. I just dropped them onto the sheet and baked them for about 17 minutes for my oven. They held their shape so I called them done. I am so excited for the next round of bananas that get too ripe now .
