YUM! Now, while Haddock is not found in South Florida - it's a fish that is found in the North Atlantic. We have the the SOUTH Atlantic down here off the coast of Florida, but Haddock like the colder waters of the North.

What Makes Haddock Such a Great Dinner Idea?
Haddock is a bit similar to Cod, but not as salty and firmer in texture. I have always found cod to be salty, so it is not a fish that I eat very often. Haddock is a large flaked white fish, and it is easy to learn how to bake Haddock fillets in the oven.

I do recommend you begin with our Haddock Potato Bake though! It is the best Haddock recipe ever...in my opinion! One might not really think of cooking sweet potato with fish, but the flavor combination is fantastic!

How to Make this Sweet Potato Haddock Bake Recipe
Ingredients needed to make this Sweet Potato Haddock Bake Recipe
- 2 large sweet potatoes
- 1.5 pounds of fresh haddock
- ½ cup bread crumbs
- sea salt, pepper and thyme
- 2 tablespoons olive oil

Directions for making this Sweet Potato Haddock Bake Recipe
Wash, peel and grate the sweet potato. Then spread evenly in a large oven safe baking dish. Drizzle with the olive oil.
Cut the fish or place the filets on top of the sweet potatoes.
Sprinkle with the sea salt, pepper and thyme and then cover just the tops of the fish with the bread crumbs.
Bake at 400 degrees for about 12 to 14 minute or until the fish is solid white, starting to flake apart and the sweet potatoes are cooked through and browning at the edges.
If desired, you can remove the fish and cook the sweet potatoes for additional time to brown even more, we enjoyed it coming out of the oven all at once though.

I love fish. Of course I do, I am from South Florida and have been fishing for as long as I can remember! Fishing is just a part of the South Florida lifestyle.
For the past few years, the only time I have gone fishing was when I was on a work trip and fishing was on the itinerary. Which makes this fisherwoman very, very sad. I mean, really!?! Why do I even have these fishing poles?
Why is there a fully stocked tackle box in my utility room? They are just glaring reminders that I now have to buy my fish from the grocery store...
Store bought fish isn't bad! I love that we can go to our local grocery store and buy fish that we wouldn't be able to catch locally, even if we did go out fishing. Haddock is one of those fish!
