    This chicken and hash brown casserole recipe is quick and really simple to prepare, and it is rich and heart, making it the perfect comfort food recipe!

    A Few Notes About this Hash Brown Chicken Casserole

    I like that this chicken casserole with hash browns doesn't have any cheese in it, since they all seem to have cheese! BUT you can definitely add some cheese - I added some grated parmesan!

    The hash browns are called southern style hash browns in my neck of the woods, but in reality they are frozen diced potatoes, so sometimes it will say diced potatoes on the package. These are similar to home fries or breakfast potatoes - all different forms of hashbrowns, really!

    How to Make a Hash Brown Chicken Casserole

    Please note that you do need to thaw these, so you may need to toss that bag into the fridge the day before you make the best hash brown casserole!

    Ingredients you will need to make Hash Brown Chicken Casserole 

    • 1 package, 32 oz, frozen diced potatoes, thawed
    • salt and pepper
    • 4 cups chicken, cooked and diced
    • 2 cups chicken broth
    • 1 can, 10.5 oz, cream of chicken soup
    • 1 cup sour cream
    • ยผ cup red bell pepper, diced
    • ยผ cup onion, diced
    • 1 tablespoon garlic, minced
    • ยฝ teaspoon smoked paprika

    Directions for how to make Hash Brown Chicken Casserole

    First, preheat the oven to 350 degrees F and grease a 9x13 baking pan. 

    Then spread the diced potatoes into the bottom of the prepared pan, and top them with the cooked, diced chicken and set it aside. 

    Next, in a medium mixing bowl, combine the chicken broth, cream of chicken soup and the sour cream and whisk this all together really well.

    Then stir in the diced red bell pepper, onion and garlic. Pour this on top of the chicken and potatoes and then sprinkle the top with the smoked paprika. 

    Bake for 50-60 minutes or until bubbly and hot. Remove from oven, let stand 10 minutes and serve.
