Ingredients

  • 32 oz diced potatoes thawed
  • ½ teaspoon salt and pepper
  • 4 cups chicken cooked and diced
  • 2 cups chicken broth
  • 10.5 oz cream of chicken soup 10.5 oz can
  • 1 cup sour cream
  • ¼ cup red bell pepper diced
  • ¼ cup onion diced
  • 1 tablespoon garlic minced
  • ½ teaspoon smoked paprika

Instructions

  • First, preheat the oven to 350 degrees F and grease a 9x13 baking pan.
  • Then spread the diced potatoes into the bottom of the prepared pan, and top them with the cooked, diced chicken and set it aside.
  • Next, in a medium mixing bowl, combine the chicken broth, cream of chicken soup and the sour cream and whisk this all together really well.
  • Then stir in the diced red bell pepper, onion and garlic. Pour this on top of the chicken and potatoes and then sprinkle the top with the smoked paprika.
  • Bake for 50-60 minutes or until bubbly and hot. Remove from oven, let stand 10 minutes and serve.
