    Why I Love My Ultimate Chicken Casserole

    This Ultimate Chicken Casserole is a one-two punch of delicious and easy. Those are my two main criteria for any recipe, and this one delivers it in spades!

    This chicken casserole has a rich, creamy texture and flavor, and although it's made with two cans of creamed soup, it doesn't have a super processed flavor.

    I'm also in love with how family-friendly this Ultimate Chicken Casserole is. I always made this when my daughter lived at home, and it was always a hit. In fact, I usually ran out quickly because she and her friends absolutely destroyed the leftovers after school.

    Casseroles are the quintessential family dinner meal because they're easy to make, so you can get them on the table fast. They're also delicious. They're usually cream and/or cheesy and have a ton of meat and veggies in them.

    This ultimate chicken casserole has been a go-to dish for me ever since my daughter was in middle school. I can't count the times I've made this, and I probably won't ever stop making it even now that she has moved out and started her own family. It's just too good and too easy!

    Ingredients for the Ultimate Chicken Casserole

    This Ultimate Chicken Casserole uses just a few pantry staples to make a hearty, delicious dish the entire family will love. There's nothing fancy, and you usually won't even have to go shopping to make it.

    • Instant white rice
    • Cream of chicken soup
    • Cream of mushroom soup
    • Frozen mixed vegetables, kept frozen
    • Chicken broth
    • Chicken breast, cut into 1" cubes
    • Butter, sliced

    How to Make Ultimate Chicken Casserole

    Like all casseroles, this Ultimate Chicken Casserole recipe is a epitome of simplicity. You just combine everything in a casserole dish or even a Dutch Oven and bake it. That's it!

    1: Mix everything except the chicken and butter in a greased 9x13 baking dish.

    • Add red pepper flakes for a kick of heat.
    • Change the flavor of the dish by using your favorite cream soups.
    • Substitute the chicken with cooked ground beef or sausage for a totally different casserole.
    • Make a cheesy version of this Chicken Casserole by stirring in shredded cheddar cheese.

    Tips for the Best Ultimate Chicken Casserole

    • Save washing an extra dish by mixing the casserole ingredients right in the baking dish!
    • Add the chicken last to ensure the rice, vegetables, and soups are fully mixed.
    • A light coating of non-stick spray is all you need. Don't spray so much that it pools at the bottom of the dish.
    • Don't defrost your vegetables. They'll cook to perfection while the casserole bakes.
    • Wash your hands, knife, and cutting board immediately after cutting up your chicken to avoid cross-contamination.
    • Don't wash your chicken before you cut it up. It doesn't reduce bacteria, and the splashing water can actually spread bacteria.

    Ingredients
      

    • 2 cups instant white rice
    • 10.5 oz cream of chicken soup
    • 10.5 oz cream of mushroom soup
    • 1 cup mixed vegetables kept frozen
    • 2 cups chicken broth
    • 1-½ lbs chicken breast cut into 1" cubes
    • ½ cup butter 1 stick, butter, sliced

    Instructions
     

    • Preheat oven to 400 degrees F and grease a 9x13 baking dish with nonstick cooking spray.
    • Add rice, soups, vegetables and broth to the pan and mix well. Stir in chicken. Top with butter slices.
    • Bake, uncovered, for 60 minutes or until edges are browned and rice is tender.
