    Tangy Potato Salad Recipe with French's Yellow Mustard

    While I was grown up, my mom always made the best potato salad. Unlike most potato salad that you buy in the deli at the grocery store, hers had eggs in it and sometimes she served it warm. I know, I know, warm potato salad? Don't rush to judgement, you have to try it for yourself; warm potato salad is such a comfort food! When French's asked me to create a sponsored blog post featuring French's Yellow Mustard to celebrate their awesome French's Pinterest page, I was thrilled with the opportunity to incorporate America's favorite yellow mustard into one of my favorite summertime recipes, Tangy Potato Salad!

    Potato salad just screams S U M M E R T I M E, whether you like it hold or cold. And I am pretty sure that I am not the only person who goes through several bottles of French's Yellow Mustard between the months of June and August. Between hamburgers and hot dogs being served at backyard barbecues and and of the different ways we can use French's in recipes, it's a hot commodity!

    Tangy Potato Salad Recipe with French's Yellow Mustard

    Ingredients

    2 ½ pounds russet potatoes, peeled and cut into one-inch pieces
    7 hard boiled eggs, yolks removed and cut into chunks
    ¼ cup mayonnaise
    ¼ cup miracle whip
    ⅓ cup French's Yellow Mustard
    Salt and pepper to taste

    Frenchs Yellow Mustard

    Directions

    Bring a pot of water to boil over medium high heat and add your cubed potatoes. Boil until tender - but not mashed potatoes tender! - for about 8 minutes. In a separate pot, boil your eggs over high heat for 10 minutes, then set both aside and allow to cool.

    Once cooled, peel and chop your eggs, then set aside. We aren't going to add those in until the very end so that they don't get beat up too much in mixing!

    Frenchs Yellow Mustard Potato Salad

    In a medium bowl, combine your potatoes, mayonnaise, miracle whip and French's Yellow Mustard and stir until the potatoes are completely coated. Add salt and pepper to taste and stir again.

    Add the chopped eggs and gently stir until it is all combined.

    This is such an easy recipe and the addition of a little French's Yellow Mustard really adds a new dimension to everyone's favorite BBQ side dish!
