Dessert is one of my favorite things to make for the holidays. Actually, I think that it is everyone's favorite thing to make in my family because my sisters and mom and I are always vying for the coveted dessert station when we are planning our annual progressive Family Christmas Dinner.
Don't worry - no one is doing it this year due to COVID19. We are all taking social distancing and the mandates very seriously, seeing as how Miami Dade County is a hot spot for the virus and we have immune compromised family members.
Baker's Notes About This Sweet Potato Pie Recipe
You can buy sweet potatoes in a can and drain and mash them. I recommend the plain ones, not the ones in a syrup. Or you can cook your own raw sweet potatoes and mash them up so that this is entirely "from scratch!"

How to Make this Sweet Potato Pie Recipe
Ingredients needed to make this Sweet Potato Pie Recipe
- 1 refrigerated pie crust
- ⅓ cup soft butter
- ½ cup white sugar
- 2 eggs
- ¾ cup evaporated milk
- 1 teaspoon vanilla
- 2 cups mashed sweet potatoes
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
- whipped topping

Directions for making this Sweet Potato Pie Recipe
Preheat oven to 425. Unroll the pie crust and press into a 9" pie plate. Set aside.
Cream butter and sugar with a mixer for about 3 minutes.
Add eggs, evaporated milk, vanilla, sweet potatoes and spices and beat well.
Pour into prepared pie crust.
Bake for 15 minutes at 425. Reduce oven temperature to 350 and continue to bake for 30-35 minutes or until center is set and crust edges are browned.
Remove from oven and cool completely before refrigerating. This is important, as you want the inside of the sweet potato pie to completely cool and set before putting it into the fridge - food safety, folks! We don't want any bacteria forming in the center of this delicious dessert!
Remove from the refrigerator and serve topped with whipped topping.
This Sweet Potato Pie Recipe serves 8 people. If course you can cut small slivers of pie if you'd like to make it stretch farther, but this is so easy to make that you may just want to make two pies at once so that everyone can take a slice home too!
