I have no clue how sweet potatoes became a staple on every family dinner table for Thanksgiving and Christmas, but at some point, it just became A THING. I personally have never really cared for them, but of course I eat sweet potato casserole every holiday dinner!

How to Make This Sweet Potato Cheesecake Bars Recipe
Sweet Potato Cheesecake Bars Recipe Crust Ingredients:
- 1 package, 15.25 oz, yellow cake mix
- ½ cup butter, softened
- 1 egg

Sweet Potato Cheesecake Bars Recipe Filling Ingredients:
- 1 can, 29 oz, sweet potato, drained
- 1 package, 8 oz, cream cheese, softened
- ½ cup white sugar
- 1 egg
- 2 teaspoons pumpkin pie spice
Sweet Potato Cheesecake Bars Recipe Topping Ingredients:
- 1 cup sour cream
- ¼ cup white sugar
- 1 teaspoon vanilla
- 1-¼ cups granola (without raisins)
- ¾ cup white baking chips
- 1 teaspoon pumpkin pie spice
Sweet Potato Cheesecake Bars Recipe Crust Directions:
Preheat oven to 350. Grease a 9x13 baking pan with nonstick cooking spray and set aside.
Beat cake mix, butter and egg together in a bowl. Mixture will be crumbly before it comes together as a dough. Press into prepared pan and set aside.
Sweet Potato Cheesecake Bars Recipe Filling Directions:
Add sweet potatoes to a mixer and beat well until smooth.
Add cream cheese, sugar, egg and pumpkin pie spice and beat until smooth.
Pour cover crust and spread evenly.
Bake until center is almost set, about 20-25 minutes. While baking, put together the topping.
Sweet Potato Cheesecake Bars Recipe Topping Directions:
Add sour cream, sugar, and vanilla in a small bowl and mix well. In a separate bowl, combine granola, baking chips and pumpkin pie spice and mix well.
When cooking is complete, spread sour cream mixture over the top of the bars.
Sprinkle with granola mixture.
Bake for an additional 6-8 minutes. Cool completely on a wire rack before refrigerating at least 4 hours before serving.
Slice into 24 bars and serve. Store covered in the refrigerator.
