High in protein and fiber, my spinach quinoa recipe makes a great easy weekday dinner. Quinoa is one of the most versatile of super-foods. It's a go-to for many Vegetarians. This dish is easily Vegetarian friendly by leaving out the smoked sausage.
Sun Dried Tomato and Spinach Quinoa with Smoked Sausage
I typically prepare my sun dried tomato and spinach quinoa recipe without the added smoked sausage. Quinoa a really versatile super-food as it's high in fiber and packed with protein. Wanting to make a meat eating friend happy one night, I tossed in some smoked sausage and came away with an easy weekday meal that was super tasty, healthy and very filling.

Sun Dried Tomato and Spinach Quinoa with Smoked Sausage
Ingredients
- 1 Cup Quinoa rinsed & drained
- 2 Cups Vegetable Broth
- 16 OZ Smoked Sausage
- 2 Cups Fresh Spinach chopped
- ½ Cup Sun Dried Tomatoes
- 1 TBS Garlic minced
- Bunch of Green Onion diced
- 2 TBS. Oilve Oil
- Salt & Pepper to Taste
Instructions

Bring the 2 cups of vegetable broth to a boil and add in the quinoa. Reduce heat to low and simmer for 15-20 minutes, stirring occasionally.

While the quinoa is cooking heat the olive oil in a large skillet. Add in the garlic, sun dried tomato and onion. Saute for for several minutes. Careful not to burn the garlic.

Slice the smoked sausage link and add it to your pan and heat through.

Add in the fresh spinach and allow to wilt down, continually stirring the mixture.

Lastly, add in your cooked quinoa. Stir until all ingredients are well incorporated. Salt and pepper to taste.
Sun dried tomatoes are what really makes this spinach quinoa recipe a pop of flavor. It makes a great grab and go cold lunch too if you have any left-overs.
