    This Smoked Sausage Quinoa and Spinach recipe uses a Polska kielbasa along with super healthy spinach and quinoa for a one pot meal that the entire family will love!

    What we love about this Smoked Sausage one pot meal is that you don't have to worry about smoking sausage to make it! There are tons of different types of smoked sausages in the stores: pork sausage, Italian sausage, andouille and more!

    My opinion is that the best sausage for smoking is polska kielbasa, but you can use whatever you think the best smoked sausage is in our recipe.

    How to Make our Smoked Sausage Quinoa, Sun dried Tomato & Spinach Recipe

    The preparation time was only about 10 minutes, I sliced the spinach, sausage and minced the garlic beforehand. Also, I bought the chicken broth to a boil and began cooking the quinoa. This recipe was super easy to make and it really didn't take a long time at all to cook!

    Overall, about 15 to 20 minutes for the entire meal, and there's a lot going on in this recipe too! I didn't serve this recipe with any other sides because it's super hearty and has all the great components of the perfect meal. 

    Here are all of the Ingredients that you will need to gather to make our one pot meal with Smoked Sausage

    • 1 C. quinoa, rinsed & drained
    • 2 C. chicken broth 
    • 16 oz smoked sausage
    • 2 C. fresh spinach, sliced
    • ½ C. sun dried tomatoes
    • 1 tbs minced garlic
    • 1 bunch of green onion, diced
    • 2 tbs. olive oil 
    • salt & pepper to taste

    Instructions for how to make our Smoked Sausage one pot meal  

    Bring the 2 cups of chicken broth to a boil and add in the quinoa. Reduce heat to low and simmer for 15-20 minutes, stirring occasionally.

    While the quinoa finishes cooking heat the olive oil in a large pan. Add in the garlic, sun dried tomato and onion and sauté for for several minutes.

    Slice the smoked sausage and add it to your pan and heat through. 

    Add in the fresh spinach and allow to wilt, continually stirring the mixture. 

    Lastly, add in the 2 C. cooked quinoa and add salt and pepper to taste.

    Ingredients
      

    • 1 cup quinoa rinsed & drained

      WTH? No measurements in the ingredients? One quinoa? Does that mean 1 grain? 2 fresh spinach sliced... 2 leaves?

      Not a quinoa fan. What could be used as a substitute?

      You can use couscous, rice, buckwheat or farroh too!
