    Simple Bell Pepper Bruschetta Recipe

    Bruschetta, typically made with garden-fresh tomatoes, is a popular appetizer or snack during the summer months. Of course, you don't have to only enjoy bruschetta during the summer! When fresh tomatoes aren’t available or you’re looking to prepare a unique alternative, try this Simple Bell Pepper Bruschetta Recipe which uses bell peppers instead of tomatoes.

    While this Bell Pepper Bruschetta recipe uses red and green peppers, but feel free to use any colorful combination you desire. You can also consider adding a small quantity of spicier peppers for an extra kick!

    Simple Bell Pepper Bruschetta Recipe

    Simple Bell Pepper Bruschetta Recipe

    Ingredients

    1 red bell pepper, small dice
    1 green bell pepper, small dice
    1 clove garlic, finely chopped
    ¼ red onion, small dice
    3 basil leaves, finely chopped (plus more for garnish)
    3 tablespoons olive oil
    salt and pepper as desired

    Directions

    In a large bowl, combine all ingredients and toss to combine.

    Let the ingredients sit together for a minimum of one hour, stir, then serve. Garnish with fresh basil leaves if desired.

      This is a different take on bruschetta. I'm going to have to make this for me and my mother-in-law for the Super Bowl, the hubs is unfortunately allergic to green peppers
