Raspberry Thumbprint Cookies Recipe
The little cookie is like a buttery shortbread with just a little bit of sweetness. The raspberry jam has a hint of tartness to compliment the two, making it the perfect flavor combination!
They are light, soft and crumbly - just the perfect big cookie for a decadent dessert!
I love cookies because they are perfectly portioned right out of the oven - you never have to worry about cutting a cookie in the right portion.
If there will be enough for everyone - or if you are going to overindulge, it is ALL on you - because one can really be enough.
Should it? Of course not! But if you are watching your diet, you can easily indulge in one cookie and satisfy your craving.

Raspberry Thumbprint Cookies Recipe Directions
Preheat your oven to 375 degrees.
In a large mixing bowl, add together your flour, sugar and baking powder.
Mix this together well to ensure all ingredients are thoroughly combined.
Next, you are going to add in your butter and milk, and then use a pastry blender to work the dough together.
It will take a minute or two and some elbow grease, to make sure that you have a completely combined cookie dough!
Once your dough is formed, divide the dough into six equal parts.
Then you are going to shape the dough into six balls and flatten them until they are about ½ inc in thickness.
Using a 2 tablespoon portion cookie scoop, press a large divot into the middle of each ball of dough.
This is where the "thumbprint" comes into this cookie recipe - it is like a thumbprint that you fill with goodness!
Fill each cookie with 2 tablespoons of the raspberry preserves.
Bake your raspberry thumbprint cookies for 20-25 minutes, or until the bottom begins to get golden brown.
Allow for your cookies to cool completely before you add a dusting of powdered sugar.
This Raspberry Thumbprint Cookies Recipe makes 6 large cookies.
Of course you can make these cookies smaller so that you have more servings, but it really isn't necessary because one cookie is a full serving at this size!
