While this recipe is more a side dish, if you want to double the rice the rice and broth, this Ham Cheese and Rice Skillet Recipe will serve more as a meal. As-is, this is more like a side dish for a family of 4.
The rice is the "standard" rice that takes 15 minutes to cook vs instant rice that cooks in 5.

To make this easy dinner recipe, you will need the following ingredients:
- 2 tablespoons oil
- ¼ cup diced onion
- 1 tablespoon minced garlic
- ¾ cup white rice
- 1-½ cups chicken broth
- 1 cup chopped ham
- 1 teaspoon dried oregano
- 1 cup shredded cheddar cheese
- chopped fresh parsley, optional for serving

How to Make This Ham Cheese and Rice Skillet Recipe
Add oil, onion and garlic in a skillet and mix well. Heat over medium low heat until onions are translucent.
Add rice broth, ham and oregano and bring to a boil.
Reduce heat to simmer and cover.
Cook for 15-20 minutes or until rice is tender and most of liquid is absorbed.
Stir in half of the cheese.
Sprinkle remaining cheese on top and cover until melted, about 1-2 minutes. Sprinkle with chopped fresh parsley, if desired, before serving.

Can You Use Canned Ham in this recipe?
Of course you can use canned ham - I know that many of us are really struggling to find the cuts of meat we preferred in our -pre CoronaVirus times, and we gotta do what we gotta do!
You can use canned ham, but I would not recommend it. While it is definitely easy, canned ham is super salty, and ham is salty enough as it is.
