So we all know that slow cookers and InstaPots are sweeping the world with their super simple dinner prep, right? Well, don't worry if you don't own one of those contraptions yourself! While I do own a Slow Cooker, I have yet to get an InstaPot, but you know what I do have? A cast iron skillet! Skillets are the perfect way to whip up a quick and easy meal, like this Pineapple Ham Skillet Meal Recipe! It is really good, with a nice hint of sweetness and a lot of flavor!
Anything that makes cooking dinner - or any meal, for that matter - easier, is A+ in my book! I love the sweet and savory flavor combinations in this Pineapple Ham Skillet Meal Recipe, it reminds me of Hawaiian style pizza, minus the crust and cheese! I mean, come on, who doesn't love Pineapple and Ham together! It's amazing!
Ingredients:
- 3 tablespoons butter
- 1 small white onion, diced
- 1 red pepper, chopped
- 1 broccoli crown, cut into small pieces
- 2 cups cooked ham, cubed
- 1 cup canned pineapple chunks, drained but reserve juice
- 1 tablespoon apple cider vinegar
- 2 tablespoons brown sugar
- 2 teaspoons mustard
- 2 tablespoons cornstarch
- 2 tablespoons water
- cooked white rice for serving
Directions:
In a large nonstick skillet, add butter, onion and red pepper. Heat on medium heat, stirring constantly until onions are translucent and peppers begin to soften. Add broccoli, ham and pineapple chunks. Cook, stirring occasionally, for about 5 minutes.
Stir reserved pineapple juice, vinegar, brown sugar and mustard together in a small bowl. Pour into skillet. Stir cornstarch and water together and add to skillet. Cook until bubbly and sauce begins to thicken.
Serve over a bed of white rice.
