Low Carb One Dish Meal: Chicken & Black Beans Skillet Recipe
Now that the kids are back in school, it's time for the simplest weeknight dinners that we can think of, right? Who wants to slave away over the stove all night, when there's so much homework to be done?
To be honest, whether it's back to school season or NOT, one dish dinners are always the way to go in my house. I like them quick and easy, especially since Angeline works until later at night and if I want dinner, I have to cook it myself! Ha!
You can always add some heat with hot sauce or a nice pepper jack cheese if you like your meals on the spicier side of things!

I microwave my spaghetti squash. Poke it all over with a fork, cook 8 minutes. Then turn over and cook 8 more minutes. Viola! Thanks for the recipe, I’m going to try it tonight.

I think the size of chicken breasts has changed dramatically since Julia Child's day, which could account for some of her shorter cook time.

These meatballs are so good. My family loves them…kids included. They’ve become my “go to” turkey meatball recipe. I’ve made them quite a few times and finally decided I should say thank you for a good recipe. Thank you 🙂
