Now that the kids are back in school, it’s time for the simplest weeknight dinners that we can think of, right? Who wants to slave away over the stove all night, when there’s so much homework to be done? To be honest, whether it’s back to school season or NOT, one dish dinners are always the way to go in my house. I like them quick and easy, especially since Angeline works until later at night and if I want dinner, I have to cook it myself! Ha! This Chicken & Black Beans Skillet Recipe is a very easy and simple recipe. You can always add some heat with hot sauce or a nice pepper jack cheese if you like your meals on the spicier side of things! You can also top this Chicken & Black Beans Skillet Recipe with chopped fresh cilantro, and serve with sour cream…I’m a huge fan of sour cream whenever I’m eating a meal like this!
I really love this Chicken & Black Beans Skillet Recipe because with it just being Angeline and I in the house, we can make this ONE DISH and then we have a full dinner…and either lunch or dinner pre-made for the next day with the leftovers. If we add a salad and some rice, we can even cut the chicken breasts in half and stretch the portions farther and cook even less!
Chicken & Black Beans Skillet Recipe
Ingredients:
- 1 lb chicken breasts
- 1 tablespoon oil
- 1 can, 15 oz, black beans, drained and rinsed
- 1 cup salsa (hot, medium or mild)
- 1 cup shredded cheddar cheese
Directions:
Add oil and chicken to a skillet and cook on medium high until halfway done.
Stir in beans and salsa bring just to a boil. Reduce heat and cover, cooking for 15-20 minutes or until the chicken is cooked through.
Add cheese and serve with beans and salsa.

I microwave my spaghetti squash. Poke it all over with a fork, cook 8 minutes. Then turn over and cook 8 more minutes. Viola! Thanks for the recipe, I’m going to try it tonight.
I think the size of chicken breasts has changed dramatically since Julia Child’s day, which could account for some of her shorter cook time.
These meatballs are so good. My family loves them…kids included. They’ve become my “go to” turkey meatball recipe. I’ve made them quite a few times and finally decided I should say thank you for a good recipe. Thank you 🙂
