I have loved oatmeal ever since I was a little kid...the only thing I loved more than a bowl of oatmeal with fresh fruit on top was oatmeal cookies and this Oatmeal Chocolate Chip Bars recipe definitely does not disappoint!

Why We love this Oatmeal Chocolate Chip Bars Recipe

I love Oatmeal Raisin Cookies, and I absolutely LOVE Oatmeal Chocolate Chip cookies too, like this amazing recipe I am sharing using the leftover oatmeal from my recent Instant Pot Oatmeal Recipe.

Yes, I know - no one likes Oatmeal Cookies and I have heard the joke quite often about being tricked into eating an oatmeal raisin cookie because the person thought it was a chocolate chip cookie!

I can never get enough of Oatmeal Cookies, but I love that these are actual bars - it makes them so much easier to gift because you can just stack them up evenly in a storage container or gift tin. They're perfect for gift giving around the holidays!

Made this recipe with leftover steel cut oats. Baked it in a round glass pie baking dish and it was perfect for Chocolate Chip Cookie Banana Split Pies! Yum!

I’m so glad I found this recipe! I made steel cut oats oatmeal with tons of leftovers that were not getting eaten. I was concerned because I had sweetened my oatmeal with allulose, cinnamon, and some maple extract so I wasn’t sure if it would be a sugar overhaul but it was definitely not too sweet. I actually even added some cinnamon chips and pecans and it was so good! Since it’s so hot here I decided to use my baby cakes maker that plugs in. It makes individual cakes that bakes in no time! I paired it with my homemade sugar free ice cream and we had this for dessert 🤩 I will definitely make this one again!
