BBQ Ribs Queso Dip Recipe
Football season is in full swing and lots of people are gathering for their game nights - I had one of my own a few weeks ago, where a friend came over and we watched the game together and I made plenty of snacks for us.
I can't wait to have him back over and make this BBQ Ribs Queso Dip Recipe for him, I know that he'll love it!
How to Make a BBQ Ribs Queso Dip Recipe
Now, I have made plenty of queso dips in my day. I used to host a ton of parties and queso is ALWAYS received with wide open arms by party goers!
But I wanted to use the Curly's BBQ Ribs for this queso dip recipe, so I did some internet searching and came across this Alton Brown recipe that used rib meat instead of ground beef or sausage.
Of course I changed it up, as I was making a BBQ ribs based recipe - it is just so easy to grab Curly's BBQ ribs in the meat section and throw those bad boys into the slow cooker!
BBQ Ribs Queso Dip Recipe
Ingredients
- One package Curly's BBQ Ribs
- 12 ounces sharp cheddar cheese
- 8 ounces pepper jack cheese (I used sliced pepper jack because it was on sale at my grocery store)
- 8 ounces cream cheese
- 8 ounces whole milk
- ½ cup green chili
- 1 can Chipotle peppers in adobo sauce
Directions
Now, as with most slow cooker meals, this was easy-peasy. My biggest note is that when you open the Curly's BBQ ribs, do not just shake it out into the slow cooker. There is A LOT of sauce in that package and you don't want that - you just want the ribs and the bit of sauce that is going to be stuck to them.
Now, it does not really matter which order you place the rest of the ingredients into the slow cooker, just wait to add the whole milk until it's cooked. The beauty of a slow cooker is that you just throw it all in and worry about it later!
I cooked this on the low setting for about 3 hours.
Once it is done - it takes about 3 hours on low - stir it together so that all of the cheeses combine. You'll be able to easily remove the bones from the ribs once you begin stirring it up. Then add in your milk and stir again until it's completely combined and leave on low setting for about 30 mins.
BBQ Ribs Queso Dip Recipe
This BBQ Ribs Queso Dip Recipe is rich, thick and so flavorful! It has a kick to it but it isn't actually SPICY. So it's perfect for people like me who enjoy the flavors but don't really enjoy "hot" foods. The green chili lends smoke and heat but without the kick of jalapenos, which are used in the original recipe.
You can serve it up with celery, tortilla chips and assorted pepper strips!
