Now, about those enchiladas...I grabbed a package of Curly's Pulled Pork and came up with this Pulled Pork Enchiladas with Mango Salsa Recipe, which is the most Miami barbecue-style dish I could think of. Tasty barbecue...and MANGO.
Pulled Pork Enchiladas with Mango Salsa Recipe
Ingredients for Pulled Pork Enchiladas
- 1 container Curly's Pulled Pork
- 1 can red enchilada sauce
- 2 cups Mexican-style shredded cheese
- 8 - 12 8 inches flour tortillas
- fresh cilantro for garnish
Ingredients for the Mango Salsa
- 1 mango, peeled and diced
- ⅓ cup peeled, diced cucumber
- 2 tablespoons diced red onion
- 3 tablespoons lime juice
- ¼ cup roughly chopped cilantro leaves
Directions
The lovely thing about this recipe is that the hardest part of making enchiladas is preparing the meat. Clearly, as Curly's BBQ is already cooked and ready to go, you can completely skip that step and head straight to assembling the enchiladas!
Of course you still need to chop the ingredients for the mango salsa, so go ahead and preheat the oven to 400 degrees while you do that.
In a large bowl combine the Curly's Pulled Pork and one cup of shredded Mexican cheese.
Add in about ⅓ cup of enchilada sauce and stir well. Remember, we're focusing on the flavor of the awesome Curly's Pulled Pork, so less is more when it comes to the enchilada sauce. Spoon the filling into tortillas but make sure not to overfill them.
You need to be able to completely wrap them closed, then place seam-side down in the baking dish. Spoon about ⅓ cup of enchilada sauce over the tortillas and then sprinkle with about 1 cup of cheese.
Bake uncovered for about 20 minutes. This Pulled Pork Enchiladas with Mango Salsa Recipe makes 3 servings - because it's just me at home right now, I tend to make very small recipes. You can easily make this a full family dinner portion by doubling the ingredients and using a larger baking dish. A 9 x 13 casserole dish and baking for 25 minutes works best for a full family recipe.
Put the diced mango, cucumber, red onion, and cilantro in a medium bowl and toss with lime juice.
It's been quite a while since I've made enchiladas and I won't lie, I sat down immediately and demolished the entire plate.
