I love cupcakes. While I am living alone now, I always had a small family, with just three of us in the house. So, as you can imagine, it was never really feasible to bake a cake, as most of it went to waste! But hello...sometimes we just want cake, right?!
Making cupcakes is the perfect alternative when you have a small family, as they are not only already perfectly portioned, but they're easy to divvy up and give away to friends or family when you only have a few people living at home.
They're also perfect for just grabbing a few and taking them to work to share with coworkers! I used to take baked goods to my office ALL of the time when I was in the regular working world.
I make what my old friends would refer to as "crack brownies," because they were SO incredibly tasty! Cupcakes are just as fun, and hello, who doesn't love a little buttercream frosting?

How to Make This Coconut Lime Cupcakes Recipe
Coconut Lime Cupcakes Recipe Ingredients
- 1.5 cups all-purpose flour
- ½ tablespoon baking powder
- Pinch salt
- 1 stick butter, softened
- 1 cup granulated sugar
- 3 eggs, room temperature
- Juice of one lime
- ¼ cup milk
- ½ cup shredded coconut
For the buttercream frosting:
- 2 sticks softened butter
- 4 cups icing sugar
- Juice of half a lime
- 1-2 tablespoon milk
- 1 drop green gel food coloring
- Shredded coconut for garnishing

Coconut Lime Cupcakes Recipe Directions
Preheat your oven to 350 degrees F. Line a muffin tin with cupcake liners and set aside. In a large bowl, sift together the flour, baking powder and salt.
In another bowl, beat together butter, sugar and eggs. Add lime and stir some more.
In thirds, add dry ingredients into bowl of wet ingredients, alternating with the milk. Mix until batter completely forms.
Fold shredded coconut into batter.
Scoop cupcake batter into each section of the muffin tin, filling it about ⅔ of the way.
Bake for 15-18 minutes and allow to cool before decorating.
To make the buttercream, use an electric mixer to beat together butter, icing sugar, lime and milk. Start on slow speed, then gradually increase to high.
Which Frosting Tip To Use In This Coconut Lime Cupcakes Recipe
Once the ingredients are well-incorporated and smooth, add gel food coloring and beat more. The buttercream is ready once it forms semi-stiff peaks. Scoop buttercream into a piping bag with Wilton #12 attached. Now, you will want to frost each cupcake generously. Don't skip on the goodness!
