As much as I love baking and sharing new baked goods recipes with you guys, sometimes life gets so busy that I barely have the energy to cook dinner, let alone spend all day in the kitchen whipping up new cookies to share…of course, just because I don’t have time to try any new cookie recipes right now doesn’t mean that you have to go without! I had my friend Priscilla of It’s Peachy Keen create a new recipe for me last week and I think it’s pretty dynamite! Priscilla made this Chocolate Chip Graham Cracker Cookie Bars Recipe super quickly, I can’t believe how easy they are to make!

With just three ingredients and just 15 minutes in the oven for one batch, this might be the easiest cookie recipe I’ve shared since I made my 3 Ingredient Peanut Butter Cookies last year!

Don’t they look delicious? I’ve never used graham cracker crumbs aside from my various attempts at making cheesecakes and was pretty surprised that you could actually make a cookie recipe with them!

The sweetened condensed milk ensures that you end up with a moist, rich cookie, even though there is no flour, eggs or butter! I tell you, I learn something new every day!

Chocolate Chip Graham Cracker Cookie Bars Recipe

Ingredients

  • 2 cups of graham cracker crumbs
  • 1 can 8oz of condensed sweetened milk
  • 1 1/2 cups of milk chocolate chips or dark chocolate chips I prefer dark chocolate!
  • Optional: sprinkles for the top of the cookie bars

Instructions

  1. Preheat your oven to 350 degrees. Line a 8x8 baking dish with parchment paper; use two large pieces, and lay one day with the edges hanging over the edge of the baking dish, then repeat with the other piece of parchment paper in the opposite direction so that they are overlapping. You will use these as handles to lift out the cookie bars once they are cooked!
  2. In a large bowl, mix the graham cracker crumbs and condensed milk.
  3. Add in your chocolate chips, and any additional add-ins that suit your fancy! A few ideas are chopped nuts, sprinkles, etc.
  4. Pour into a 8x8 baking dish and bake at 350 degrees for 15 minutes or until brown around the edges.
  5. Allow to cool for about 20 minutes, or place into the refrigerator so that they can set and harden.
  6. Using the edges of the parchment paper hanging over the baking dish, gently lift the cookie bars out of the baking dish and cut into squares or rectangles and serve!

    I love how delicious these look AND how simple they are to make! Sometimes life definitely gets in the way and you just need something simple as a go-to. I like to bake when I want to slow down my mind so this seems like a great easy recipe to try 🙂
