    This Chicken Over Rice recipe is a quick and easy one-pot meal loaded with flavor, not effort. This baked recipe is full of seasoned chicken thighs and tender, perfectly cooked rice, and it's ready in a flash.

    I love dinners that are tasty and easy. Everything tastes better when you don't have to spend all day in a hot kitchen making it! That's why this chicken is one of my favorite bakes to make. It's easy and delicious. Winner, winner, chicken dinner, as they say!

    Quick and easy are always two major selling points for me when it comes to any recipe, especially easy dinners like this Chicken Over Rice. I love being able to just throw everything for this one pot meal into one dish, pop in in the oven, and just wait for it to do its thing.

    Of course, quick and easy doesn't mean much if the recipe isn't also delicious, and this Chicken Over Rice dinner ticks that box as well. The chicken thighs are seasoned with classic chicken spices, and the rice is so tender and perfectly cooked.

    Finally, the versatility of this recipe really shines through as well. It's a hearty dish that can feed a hungry family for dinner or be taken to potlucks for a tasty addition.

    How to Make Chicken Over Rice

    This hearty one pot meal is as easy as it is delicious. Everything gets added to one dish and then baked. That's it!

    Coconut milk and broth make the rice extra flavorful, and classic spices like thyme and poultry seasoning give the chicken thighs a big kick of flavor. When it's all done, you have perfectly cooked rice and tender, juicy chicken everyone will love.

    Ingredients for Chicken Over Rice

    This Chicken Over Rice recipe only uses a few simple ingredients that you can find in your kitchen or at your local grocery store. Everything from the chicken thighs to the jasmine rice is at every grocery store.

    • Jasmine rice (not instant rice)
    • Diced onion
    • Coconut milk
    • Chicken broth
    • Dried ground thyme
    • Salt
    • Ground black pepper
    • Bone in, skin on, chicken thighs
    • Olive oil
    • Poultry seasoning

    Instructions for making Chicken Over Rice

    This chicken over rice recipe is all made in one dish, so it's incredibly easy to make. You just add everything to a casserole dish and bake it. That's all there is to it.

    Firstly, mix the rice, onion, coconut milk, broth, thyme, salt, and pepper in a greased 9x13 baking dish.

    Place the thighs on top of the rice mixture and coat them with olive oil.

    Chicken Over Rice

    Season them with salt, pepper, and poultry seasoning.

    Then cover the baking dish with foil and bake until the rice is fully cooked and the chicken is cooked through.

    Then you will remove the foil and broil until the chicken is browned.

    Substitutions and Variations

    • This one pot recipe works with chicken thighs, drumsticks, leg quarters, or bone-in, skin-on breasts.
    • Try making this with pork chops, too!
    • Add diced garlic for a kick of flavor.
    • Add red pepper flakes to the seasoning mix to make this a spicy recipe.

    Top Tips for Making the Best Chicken Over Rice

    • The rice will absorb most of the liquid, so be sure to spray your dish with non-stick cooking spray.
    • Watch your dish carefully when broiling the chicken. They brown quickly, and you don't want them to burn.
    • It's important to use regular Jasmine rice and not quick rice. Quick rice will get mushy.
    • Cover your dish tightly with foil to trap the steam the recipe makes while it bakes.

    Is this a casserole?

    This chicken over rice is a bake, not a casserole. Casseroles are made with mixed or layered ingredients. Bakes like this are simply baked in one dish, and the ingredients are usually more separated, as with the chicken sitting on top of the rice.

    How close should the chicken be to the broiler?

    Broil your chicken on the center rack of the oven. This allows it to crisp on the outside without burning the top of the rice.

    Why is Jasmine rice used in this recipe?

    Jasmine rice tends to have a soft, sticky, and somewhat chewy texture, making it perfect for bakes like this.

    Does this chicken over rice have a coconut flavor?

    Believe it or not, the coconut milk does not give this recipe a coconut flavor. Coconut milk is mild, and the spices are the only thing you taste.

    Ingredients
      

    • 2 cups jasmine rice not instant rice
    • ½ cup onion diced
    • 13 oz coconut milk 13 oz can of coconut milk
    • 1-½ cups chicken broth
    • 1 teaspoon ground thyme dried
    • 1-½ teaspoons salt
    • ½ teaspoon ground black pepper
    • 6 chicken thighs skin on, bone in
    • 1 tablespoon olive oil
    • poultry seasoning
    • salt and pepper
    • fresh parsley optional for serving

    Instructions
     

    • Preheat oven to 350 degrees F and grease a 9x13 baking pan with nonstick cooking spray.
    • Pour rice into the bottom of the pan with onion, coconut milk, broth, thyme, salt and pepper. Mix well.
    • Gently place chicken thighs on top of rice mixture and coat any exposed chicken with olive oil. Season thighs with salt, pepper and poultry seasoning.
    • Cover tightly with foil and bake for 1 hour.
    • Remove foil and broil for 3-5 minutes or until tops of chicken begins to brown.
    • Serve immediately topped with chopped fresh parsley if desired.
