    This Apple Walnut Salad Recipe for Summer is just perfect for any summer time gathering, whether it is for Memorial Day, the 4th of July or just having friends over for a backyard barbecue.

    It is so tasty and light, with a lovely texture! Just be sure to make enough, because your guests are going to love it!

    Summertime may be winding down, but here in South Florida, it's warm all year round...and the heat isn't going to give in anytime soon! Last week it was 104 degrees when I got into my car! Seriously, mother nature...how's about you give Miami a rest?

    We are knee-deep in BBQ season and I am racking my brain with ideas for side dishes to bring to my friend's little backyard gatherings. Of course corn on the cob and baked beans always go well with BBQ, but sometimes a girl just wants to bring a cold, refreshing dish to lighten things up!

    Our Apple Walnut Salad Recipe is crunchy and a bit tart with the granny smith apples, but then there's a little sweet from the maple syrup. It's really more tart than sweet, so expect a burst of crisp freshness on your tongue!

    This is perfect because it really is a tasty, healthier type of salad, even if it does have the natural sugar of raisins and apples in it. You can easily get away with serving up this tasty little fruity salad during the meal AND STILL SERVE APPLE PIE FOR DESSERT!

    Ingredients needed to make this Apple Walnut Salad Recipe

    • 2 large granny smith apples, cored and sliced thin
    • 2 cups shredded coleslaw mix
    • ¼ cup lemon juice
    • ¼ cup maple syrup
    • ¼ cup vegetable oil
    • 2 teaspoons honey mustard
    • ½ teaspoon black pepper
    • ½ cup raisins
    • ½ cup walnuts

    Directions for making this Apple Walnut Salad Recipe

    Mix together apples and coleslaw mix.

    In a small bowl, add lemon juice, maple syrup, oil, mustard and pepper. Mix well and pour over apple mix. Stir well to coat evenly. Let set for 30 minutes before topping with raisins and walnuts and serving.

    Refrigerate leftovers.

    You can make this Summer salad ahead of time, since you coat the mix with lemon juice, the apples won't brown! I would say make it no more than one day ahead of time.
