To make the best zucchini ground beef skillet, here’s what you’ll need:
- 1lb ground beef
- ½ cup diced yellow onion
- 1 tablespoon minced garlic
- 2 teaspoons dried Italian seasoning
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1-½ lbs zucchini, sliced into ¼" rounds and quartered
- 2 cans, 14.5 oz each, Italian style diced tomatoes
- 2 cups shredded mozzarella cheese
Step-by-Step Instructions
Brown the Meat
Add ground beef, onion and garlic to an oven proof skillet and heat over medium heat until beef is browned. Drain grease.
Spice It Up
Add Italian seasoning, salt and pepper and mix well.
Add The Veggies
Add zucchini and cook for 6-8 minutes or until tender.
Add Tomatoes and Cheese
Stir in tomatoes and top with cheese.
Bake and Broil
Bake at 350 degrees for 20-25 minutes or until cheese is melted and center is hot. Broil for 2-3 minutes if desired before serving.
