Zucchini Ground Beef Casserole

Ingredients

  • 1 lb ground beef
  • ½ cup diced yellow onion
  • 1 tablespoon minced garlic
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1-½ lbs zucchini sliced into ¼" rounds and quartered
  • 2 cans 14.5 oz each, Italian style diced tomatoes
  • 2 cups shredded mozzarella cheese

Instructions

  • Add ground beef, onion and garlic to an oven proof skillet and heat over medium heat until beef is browned. Drain grease.
  • Add Italian seasoning, salt and pepper and mix well.
  • Add zucchini and cook for 6-8 minutes or until tender.
  • Stir in tomatoes and top with cheese.
  • Bake at 350 degrees for 20-25 minutes or until cheese is melted and center is hot. Broil for 2-3 minutes if desired before serving.
