Our taco casserole with Fritos combines savory ground beef, zesty spices, gooey cheese, and crunchy corn chips in a comforting ground beef casserole that is sure to become a family dinner favorite.

    Walking Taco Casserole Recipe

    This Walking Taco Casserole is perfect for busy weeknights or weekend gatherings, whether it's for a big family dinner, or for a small family that loves leftovers! This walking taco bake with Fritos brings together the flavors of a taco in a convenient and satisfying way, making it a go-to easy dinner recipe for any occasion.

    We love an easy casserole dinner or casserole bake when we're short on time and want a hearty, filling dinner without a lot of fuss! This walking tacos casserole recipe was inspired by our Mexican Chicken Casserole with Doritos, and you can actually mix this walking taco bake recipe up a little by using Doritos in it too!

    How to Make a Walking Taco Casserole

    I ended up using Chili Cheese flavored corn chips (Fritos) and they added great flavor to the dish! Not too spicy, but not bland either - I think that they're perfect for this dish, but you can absolutely use regular Fritos if you don't like the Chili Cheese flavored Fritos! 

    I used an ovenproof skillet for this walking taco bake casserole, but if you do not have an ovenproof skillet (mine is 12") you can put this into a square 9x9 or 10x10 baking pan or even a casserole dish. 

    The chips do soften a bit after you bake them with the ground beef and they most certainly soften when you reheat, so serving with additional/reserved chips is the way to keep the crispness of an authentic walking taco!

    Ingredients you need to make a Walking Taco Casserole: 

    • 1 lb ground beef
    • 1 package, 1.25 oz, dry taco seasoning
    • 1 can, 14.5 oz, diced tomatoes (do not drain)
    • 1 package, 9.25 oz, chili cheese corn chips
    • 1-½ cups shredded Mexican cheese
    • 1 cup shredded lettuce
    • ¼ cup sour cream

    Directions for how to make a Walking Taco Casserole: 

    First, make sure to preheat your oven to 350 degrees F.

    And add your ground beef to an ovenproof skillet and cook it over medium high heat.

    Stir frequently, making sure to break apart the ground beef while cooking, until it's no longer pink. Then drain the grease. 

    Next, add the taco seasoning and diced tomatoes to the cooked ground beef.

    Continue to cook for 2 minutes, stirring frequently to mix the ingredients together. Remove from heat. 

    Then stir in half of the corn chips and 1 cup of shredded Mexican cheese.

    Then bake your walking taco casserole mixture for 15 minutes. When cooking is complete, top it with the reserved shredded Mexican cheese and return the casserole dish to the oven for an additional 5 minutes, or until cheese is melted.

    Finally, top your ground beef casserole with the shredded lettuce and sour cream and serve it with the reserved corn chips.

    This Walking Taco Bake recipe serves 4-6, depending on your appetite!

    Variations and Substitutions for this Casserole Recipe

    • Make it Spicier! - Add jalapenos during the cooking process, or even on top of the casserole when you're serving it.
    • Use Enchilada Sauce - Instead of using taco seasoning, make this Walking taco casserole recipe with enchilada sauce! Either red or green will work well!
    • Make it with Shredded Chicken - You can use shredded chicken in place of the ground beef and make it a chicken taco casserole!

    • 1-½ cups shredded Mexican cheese this may be branded as Taco cheese
    • 1 cup shredded lettuce
    • ¼ cup sour cream
