Walking Taco Casserole

This easy Walking Taco Casserole recipe offers a creative and super tasty twist on traditional tacos that will be a family dinner favorite!

Ingredients

  • 1 lb ground beef
  • 1.25 oz taco seasoning
  • 14.5 oz diced tomatoes do not drain
  • 9.25 chili cheese corn chips
  • 1-½ cups shredded Mexican cheese this may be branded as Taco cheese
  • 1 cup shredded lettuce
  • ¼ cup sour cream

Instructions

  • First, make sure to preheat your oven to 350 degrees F.
  • And add your ground beef to an ovenproof skillet and cook it over medium high heat, stirring frequently, making sure to break apart the ground beef while cooking, until it's no longer pink. Then drain the grease.
  • Next, add the taco seasoning and diced tomatoes to the cooked ground beef. Continue to cook for 2 minutes, stirring frequently to mix the ingredients together. Remove from heat.
  • Then stir in half of the corn chips and 1 cup of shredded Mexican cheese.
  • Then bake your walking taco casserole mixture for 15 minutes.
  • When cooking is complete, top it with the reserved shredded Mexican cheese and return the casserole dish to the oven for an additional 5 minutes, or until cheese is melted.
  • Finally, top your ground beef casserole with the shredded lettuce and sour cream and serve it with the reserved corn chips.
