    Veggie & Turkey Frittata Recipe

    Let's chat about brunch, shall we? After all, it's my favorite meal of the day and it's vastly underrated! We have a local restaurant that serves an incredible brunch, but not only is it very pricey, but the buffet line is full of incredibly calorie-laden foods...which isn't exactly how I want to start my day. I love a nice brunch that allows me to indulge without going overboard, don't you?
    Take this veggie and turkey frittata recipe as an example. It was SO tasty and delicious - totally indulgent - but it was made with lean Butterball turkey, fresh mushrooms and peppers and egg whites and mozzarella cheese.

    You don't have to give up the great taste of meals you love (like brunch!) when you use ingredients like Butterball's turkey burgers, deli meat, turkey bacon and dinner sausage! These products make it easy to have a great tasting, indulgent meal without any guilt.

    There are so many products to choose from, including:

    Butterball Turkey Burgers in Original Seasoned, Sweet Onion, Cheddar and All Natural White, which is ¼ lbs, the perfect size for a juicy burger experience! These are all awesome choices for the die hard burger lover, but with less fat and calories.

    Butterball Turkey Dinner Sausage - Butterball Turkey Dinner Sausages are a great option for easy weeknight dinners because of their versatility and quick cooking times. With 60% less fat than beef or pork sausage, it's a great way to cut the fat and calories in your favorite dishes without sacrificing taste!

    Butterball Turkey Bacon - With 65% less fat than pork bacon and with only 25 calories per slice, you don't need to give up the bacon in your favorite breakfast recipes!

    And then there's my favorite...Butterball Deli Meat! I always keep Butterball Deli lunch meat in the fridge for making sandwiches, throwing on top of salads to add a little protein, and for making omelets and frittatas - for breakfast and brunch.

    Veggie & Turkey Frittata Recipe

    Ingredients

    2 large brown eggs
    1 cup egg whites
    ½ shredded low-fat mozzarella cheese
    ¼ cup chopped red and green peppers
    ½ cup slices white button mushrooms
    ½ cup of shredded Butterball deli lunchmeat
    dash of salt and pepper

    Directions

    Spray a saute pan with nonstick cooking spray and set the heat to medium. Cover with a lid and saute the peppers and mushrooms for about five minutes, until tender.

    Preheat your oven to 300 degrees.

    In a medium bowl, whisk together the egg whites and two eggs, as well as salt and pepper. Pour over the veggies and then top with the shredded Butterball deli lunch meat.

    Cover the pan with the lid and remove to the oven and cook for five minutes.

    Remove from oven and top with shredded mozzarella cheese, then put back into the oven for five minutes.

    Cut the frittata like you would slices of pie and serve while hot!

      I've never learned how to make one of these frittata. In fact, I've never even tried one. However, this looks really good and simple to make. Thank you for telling us about it.

      I've never made a frittata before - I actually never knew it was that simple! We generally just eat turkey as a meal making it as a 'whole bird' 🙂
