In a medium bowl, whisk together the egg whites and two eggs, as well as salt and pepper. Pour over the veggies and then top with the shredded Butterball deli lunch meat.
Cover the pan with the lid and remove to the oven and cook for five minutes.
Remove from oven and top with shredded mozzarella cheese, then put back into the oven for five minutes.
Cut the frittata like you would slices of pie and serve while hot!
