    I always loved Valentine's Day as a child because my parents celebrated the holiday as a family - they had their own date, of course, but they always took us out to celebrate as well. During my marriage, Valentine's Day was always a special day for my ex-husband and I too, and it was one of the only times that he actually gave me flowers, chocolates and gifts.

    Now that I am divorced, Valentine's Day is sort of a tricky day for me...I get so excited about it in the weeks leading up to it, but when it rolls around, I remember that I don't actually have anyone to celebrate it with. Most of my girlfriends are in relationships, so...yeah, Jenn spends that lover's day all alone.

    Valentine Cupcakes With Homemade Marshmallow Cream Frosting Recipe

    Valentine Cupcakes With Homemade Marshmallow Cream Frosting Recipe

    Ingredients

    • 12 of your favorite cupcakes, baked and cooled
    • 1 stick (½ cup) butter, softened
    • 1 cup powdered sugar
    • 1 teaspoon vanilla
    • 1 container (7oz) marshmallow cream/fluff
    • Valentine sprinkles
    • Wilton XOXO sprinkles


    Directions

    Beat butter in a mixer for about 30 seconds.

    Add powdered sugar, half a cup at a time and beat well after each addition. Beat in vanilla.

    Add marshmallow cream and beat just until combined.

    Place icing into a piping bag fitted with a star tip (Used 2D) and pipe onto prepared cupcakes. Add sprinkles.
