Now that the winter holidays are over, it’s time to get ready for Valentine’s Day! Now, I don’t really celebrate Valentine’s Day in the traditional romantic sense anymore, as I am single and not currently dating. But…back when I was a kid, my family always made a big deal of Valentine’s Day and my parents always took us kids out for dinner.
Valentine’s Day can be super fun for families to celebrate in a non-romantic way, and I promise, you’ll make memories that will last your children a lifetime!

How to Make This Junior Mints Valentine Shortbread Cookies Recipe
Ingredients
- ½ cup butter, softened
- ½ cup powdered sugar
- ½ teaspoon peppermint extract
- 1 egg yolk
- Americolor Soft Gel Paste in Red Red Color
- 1 cup flour
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- 1 box, Valentine Junior Mints
Directions
Preheat oven to 350 and line a baking sheet with parchment paper.
Combine butter, powdered sugar, peppermint extract, egg yolk and color paste in a mixing bowl. Beat on medium speed for about a minute. Stir in flour, baking powder and salt.
Roll dough into teaspoon size balls and place onto a baking sheet.
Bake for 10 minutes or until set and lightly browned on the bottom. Remove from oven and let set for 2 minutes. Place one Junior Mint candy on the cookie and gently press into the center.
Let cool completely before serving.
Makes 18 cookies.
