This Sweet Potato Haddock Bake is an easy seafood meal idea that the whole family will love! With a light and flaky fish fillet and shredded sweet potato, this one pot dinner makes a great family meal!

YUM! Now, while Haddock is not found in South Florida - it's a fish that is found in the North Atlantic. We have the the SOUTH Atlantic down here off the coast of Florida, but Haddock like the colder waters of the North.

Ingredients needed to make this Sweet Potato Haddock Bake Recipe
- 2 large sweet potatoes
- 1.5 pounds of fresh haddock
- ½ cup bread crumbs
- sea salt, pepper and thyme
- 2 tablespoons olive oil

Directions for making this Sweet Potato Haddock Bake
Wash, peel and grate the sweet potato. Then spread evenly in a large oven safe baking dish. Drizzle with the olive oil.
Cut the fish or place the filets on top of the sweet potatoes.
Sprinkle with the sea salt, pepper and thyme and then cover just the tops of the fish with the bread crumbs.
Bake at 400 degrees for about 12 to 14 minute or until the fish is solid white, starting to flake apart and the sweet potatoes are cooked through and browning at the edges.
If desired, you can remove the fish and cook the sweet potatoes for additional time to brown even more, we enjoyed it coming out of the oven all at once though.
