Why You will love This Strawberry Blueberry Tart Recipe
I did everything in my food processor, but I've provided some alternate options if you don't have a food processor. If you would like to purchase a food processor, here are a few recommendations from Amazon.com!
I just love the combination of red, white and blue when it comes to desserts. I guess it doesn't hurt that I really love strawberries and blueberries either! It is so much fun to come up with red, white and blue themed treats, especially during the summer time when we are all celebrating the 4th of July!
It is honestly one of my favorite holidays, and I love to teasingly throw it in the face of every English person that I know when it rolls around...hey, it's all in good fun, right?
Do you have any fun 4th of July traditions? I used to always have a party, or go to a pool party. However, in the past few years, no one has really had an event for me to attend, so I have either hung out at home, or gone to local community events to watch the fireworks and eat hot dogs...
There is just something about a hot dog and an ice cold beer on the 4th of July, isn't there? A hot dog or hamburger, chips, potato salad and a beer - while watching fireworks - that is just the epitome of 4th of July! It's so much fun!
Strawberry Blueberry Tart Ingredients
- 20 Golden Oreos or vanilla sandwich cookies
- 4 tablespoons butter, melted
- 4 ounces cream cheese, softened and cubed
- ¼ cup powdered sugar
- ½ cup heavy whipping cream
- fresh blueberries
- fresh strawberries, sliced
Strawberry Blueberry Tart Directions
Place cookies into a food processor and process until they are ground into fine crumbs. Add in your melted butter and process this mixture for about 20 seconds until it is mixed evenly. Pour the mixture into a round tart plan and press it down firmly with the back of a spoon. Place it into the refrigerator to chill and firm up.
Note: If you don't have a food processor, you can alternately you can crush your cookies in a plastic bag and with a rolling pin. Just be careful not to break the bag!
Rinse out the food processor and dry it. Add cream cheese, powdered sugar and heavy whipping cream. Process for about 30 seconds until a smooth frosting-like consistency.
Note: You can also alternately you can mix all three of these items in a mixing bowl and with a hand mixer.
Remove the tart crust from the refrigerator and spread filing onto the crust. Return to the refrigerator for 15 minutes to firm up.
Top your tart with fresh strawberries and fresh blueberries right before serving. I do not recommend topping your tart more than 3 hours in advance, as the moisture from the fresh fruit will seep into the whipped topping and it may become a bit messy when serving.
This Strawberry Blueberry Tart Recipe serves 10-12 people. BUT! It is so easy to make, you may want to make 2 tarts if you are having a large gathering, as everyone is sure to love this delicious dessert - especially the children! Who doesn't love all of that fresh fruit? YUM!
