When I was asked to create a second recipe using Carbonell for the holidays, I jumped at the opportunity, creating this extremely simple Prosciutto Wrapped Asparagus recipe that requires little effort but yields big, bold flavors - it's perfect for Carbonell olive oil!
It's no secret that I love olive oil. I have no less than five bottles of olive oil in the cabinet, three of which are Carbonell olive oil. When I was introduced to Carbonell earlier this year as part of a blogging campaign, I couldn't believe I'd gone so long without trying it!
This blog post is part of a paid SocialMoms and Carbonell blogging program. The opinions and ideas expressed here are my own.
Carbonell recently launched a brand new website, www.carbonellusa.com, where you can find lots of delicious recipes using Carbonell olive oil. Because there are three different varieties of Carbonell, you can create totally different flavors depending on which variety you use. My personal favorite is the Carbonell Classic!
Carbonell Olive Oil has three distinct varieties each suited to a different cooking need:
Daringly Expressive Extra Virgin Olive Oil has a rich taste and smooth flavor that will make any dish pop with Spanish personality. Use Carbonell Extra Virgin Olive Oil for salads, dips, marinades and drizzling over finished dishes. When you use the Daringly Expressive Extra Virgin Olive Oil, you give yourself permission to be a more daring and expressive version of yourself.
Fantastically Light Extra Light Olive Oil has a light taste that will take your meal to new heights. Use Carbonell Extra Light Olive Oil for high-heat cooking such as frying, sautéing, and even baking.
Distinctly Classic Olive Oil has a traditional flavor that harkens back to the heritage of Cordoba. Carbonell Classic Olive Oil is an all-purpose cooking oil, adding a mild flavor to soups, sauces and grilled meats and vegetables.
Ingredients
1 bunch of asparagus (about 20 spears)
5 slices of prosciutto
1 ½ tablespoons Carbonell olive oil
Pinch of garlic salt
Pinch of black pepper
Directions
Preheat your oven to 400 degrees F. Bundle together 4 or 5 asparagus spears and wrap with a piece of prosciutto like so.
Place on your cookie sheet and drizzle with Carbonell olive oil and then sprinkle with a little roasted garlic salt and black pepper.
I like to drizzle a little extra near the spears, as it helps them get extra crispy while cooking!
Note: You can line your cookie sheet with tin foil for an easier clean up!
Bake for 40 minutes and serve while they're still hot!
I think this will be one of the easiest, "fanciest" side dishes you can possibly make, and the clean up is so simple too! The flavor of asparagus compliments so many dishes; it pairs well with everything from steak to the most basic staples like a roasted chicken.
For those with picky children who might turn up their noses at the sight of an unfamiliar green on their plate - the "bacon" wrapped around it is a great way to make them want to try it!

This looks soooo good! We haven't experimented with asparagus here but I think I will soon. We did brussel sprouts not that long ago and we all liked them 🙂
I put olive oil on everything LOL

Oh my goodness! That looks delicious. I am always looking for good olive oil. I love lining cookie sheets with foil for easy clean up, because it's no secret I hate doing dishes. 🙂

This looks SO delicious! We have asparagus a few times a week so I need to change it up and try this!

Ok, don't laugh at me, but I'm really glad you broke this down step-by-step with photos. I've seen similar dishes posted elsewhere, but always thought it seemed too easy to work and I'd wind up lighting my oven on fire because there was some secret step I missed that was common sense to everyone else.
Now I feel brave enough to try these, plus I need to stock up on olive oil so now I have a reason to try the Carbonell.

Looks divine! I love asparagus. It can be hard to find prosciutto around here sometimes though.
