Now that Angeline is back in school, it’s time to get back to my favorite part of the school year…BAKE SALES! I always joke that I hate cooking but that I love baking, and it’s totally true. I just love creating baked goods, and when the fruits of my sweet, indulgent labors benefit my daughter’s school, then it’s all that much more enjoyable!

I am always looking for new ways to spice up my recipes, and I’m currently trying out a ton of new McCormick extracts. McCormick extracts make it so easy to put a new spin on an old favorite!

The McCormick Kitchens have developed all kinds of unique cookie and brownie recipes to make sure that your baked good contributions are the most popular items on the bake sale table.

I was inspired by the Raspberry Brownies Bake Sale recipe because hello, brownies and raspberries? Delicious!

The recipe for McCormick’s Raspberry Brownies:

Add 4 teaspoons Raspberry Extract to brownie mix and 2 teaspoons to chocolate frosting for a fruity alternative to this bake sale staple. Garnish with a raspberry.

Of course, I had to add my own touches, so I created my own version: Raspberry Brownies with Cream Cheese Frosting!

Raspberry Brownies with Cream Cheese Frosting

Ingredients

1 boxed brownie mix (or you can make brownies from scratch)
4 teaspoons McCormick Raspberry Extract
1 8 oz block of cream cheese, softened
1 stick butter, softened
3 cups confectioners sugar
2 teaspoons McCormick Raspberry Extract
1/4 cup mini chocolate chips
1 1/2 pint fresh raspberries

Directions

When preparing your brownie batter, add 4 teaspoons McCormick Raspberry Extract into the batter. Bake as directed and allow to cool completely.

Mix your cream cheese, butter, sugar and 2 teaspoons McCormick Raspberry Extract with an electric mixer for two minutes, until light and fluffy. Spread evenly over your cooled brownies, and top with raspberries and mini chocolate chips.

Cut into squares and serve!
