- 2 C. cooked Quinoa 1 C. quinoa cooked in 1 ¾ cups of water or chicken broth
- 2 eggs whisked
- 1 bunch of green onions diced (optional)
- 1 C. shredded mozzarella cheese
- 8-10 basil leaves torn into small pieces
- ½ package of pepperoni cut into small pieces
- 1 tsp. italian seasoning
Preheat the oven to 350 degrees F and spray a mini muffin tin with non-stick cooking spray. **You could also use a regular muffin tin.
Combine all the ingredients mixing well.
Use a spoon to scoop the mixture into the muffin tins.
Bake 20-25 minutes until golden brown and heated through.
Serve with your favorite pizza sauce for dipping.
