Whenever I have friends over for dinner, they're always surprised at the food I cook for them...hello! I am the oldest of four kids, I am a mom, I was married for 14 years, and I actually built a blog by sharing recipes! Of course I can cook! When I think back to my childhood, dinnertime was a REALLY BIG DEAL. My mom always cooked dinner, and we always sat at the table to eat dinner.
Of course it's so easy to order take out, or pick something up from a fast food joint on the way home (hey, I'm not knocking it, I love having pizza delivered as much as the next person), but as I am really trying to get my life back in order and focus on bettering myself, I am trying hard to cook meals for myself again and not just grab snacks here and there throughout the day. The other day I sat down to eat lunch at the kitchen table and I actually patted myself on the back for being so adult.

The thing about being a mom is that parenthood never really gets easier, even when your kids are in their 20's, go off to college, move out on their own, join the military - they're always our babies and they're always our first priority in life. We never stop parenting, ever. Can I get an "amen?"
While I may not be the best cook in the world, I have taught my daughter Angeline the importance of home-cooked meals over the years, and while she still loves fast food, she has been learning over the last few years (she's 20 now) how to cook for herself as well. This has become especially important now that she works at a dog rescue center, because her job is very physically demanding and she needs to eat a balanced diet to maintain her energy and strength.
Her job entails a lot of cleaning kennels, walking dogs, socializing dogs, etc - she does it all, and when she goes home at the end of the day, she is usually physically exhausted (she's such a hard worker, it makes me so proud of her!). Quick and easy meals are a must when you work full time, especially if is a very physical job.
We were recently talking about what kind of food she's eating, how often, etc - you know the drill, if you're a parent! Because her job is so physically demanding, she really needs to have a healthy balance of protein, carbs and veggies. This Quick and Easy Chicken Broccoli Alfredo Recipe is kind of perfect for her, because it's really easy to make thanks to the PERDUE® Fresh CutsTM chicken being already boneless, skinless and cut into either diced pieces or strips. They're SO versatile!
Quick and Easy Chicken Broccoli Alfredo Recipe
The ingredients in this Quick and Easy Chicken Broccoli Alfredo Recipe will vary depending on the size of the family you're cooking for, but these are the basics...
Ingredients
- 2 chicken breasts, diced - we used 1 package of PERDUE Fresh CutsM Chicken
- 8 ounces of Bowtie, Farfalle or Mini Farfalle pasta
- 16 ounces Alfredo Sauce - that's 1 jar of Alfredo Sauce
- 3 cups of broccoli, chopped
- 1 tablespoon olive oil
- garlic salt and pepper to taste
Directions
In a saucepan (with a lid) over medium heat, add a few table spoons of olive oil - just enough to cover the pan so that you can sauté your chicken. Add the chicken and sprinkle with garlic salt and pepper, and close the lid! You'll have to check the chicken every few minutes and turn so that it cooks evenly. Remember, when it comes to chicken, it's better to cook at a lower temperature for a longer period of time so that it stays tender and juicy!
Meanwhile, cook your pasta according to the package directions and drain. I used microwavable broccoli to make things easier, so you can choose how to cook your broccoli however you like!
Once the chicken is done, add into the pot with the drained pasta.
Add your alfredo sauce and broccoli and stir well.

Alfredo sauce is my absolute favorite - yum! I haven't tried Perdue Fresh Cuts before, but they sound like they are a great option for busy weeknight dinners - I will be picking them up for sure!
