Oh, fall and winter meals...even though it doesn't get particularly cold here in Miami, I do love me some comfort food! I have a funny story about this Pork Chops & Potato Skillet Meal Recipe, relating back to my time in Barcelona. I was on a Tripadvisor day tour to Costa Brava, and I hadn't had red meat in quite a while. Between evacuating for Hurricane Irma and then flying to Barcelona, I was eating all kids of food...but I hadn't had a steak in weeks. So, of course I ordered a "filet steak" at a restaurant during our tour...and I receive a pork chop. Don't get me wrong, I am a big lover of pork and pork chops are delicious! BUT I WANTED A STEAK.
Okay, rant over. This Pork Chops & Potato Skillet Meal Recipe is really easy to make an the clean up is super simple because it's all cooked right in one skillet! One pot and Skillet meals are some of my favorites for easy weeknight dinners, because even though I work from home and you'd think I have all of this time on my hands, I really hate doing dishes.

Pork Chops & Potato Skillet Meal Recipe
Ingredients:
- 4 boneless pork chops
- 2 tablespoons flour
- salt and pepper
- 2 tablespoons olive oil
- ¼ cup shredded Parmesan cheese
- 2 cups gold potatoes, sliced in ⅛" thickness
- 1 onion, sliced into ⅛" thick rings
- ¾ cup chicken broth
Directions:
Heat oil in a skillet on medium heat.Coat each pork chop with flour and season with salt and pepper. Place into skillet and brown on both sides.
Sprinkle half of cheese on top of pork and top with potatoes, remaining cheese and onions. Pour broth into skillet.
Cover skillet and heat for about 40-45 minutes or until potatoes are done. Serve the pork chops with potatoes and onions.
