Peanut Butter Cookies with Hazelnut Frosting

Mmmmm…cookies! Who doesn’t love a nice peanut butter cookie? Well, aside from the unfortunate souls who have peanut allergies, I mean! I love peanut butter cookies and they are so easy to make! I even have a really fun 3 ingredient peanut butter cookie recipe that is gluten free if you omit the chocolate chips! Granted, nothing goes together like peanut butter and chocolate, except for maybe peanut butter and jelly. But I haven’t tried my hand at making peanut butter and jelly cookies yet!

But I digress.

That happens a lot when I start thinking about cookie recipes!

This Peanut Butter Cookies with Hazelnut Frosting is a new twist on a classic treat, and will be sure to please kiddos with a sweet tooth!

Peanut Butter Cookies with Hazelnut Frosting

Ingredients

  • Cookies
  • 1 ½ Cups AP Flour
  • 1 Cup Sugar
  • 1 Cup Peanut Butter Smooth or Chunky
  • 1 Stick Butter softened
  • 1 Egg
  • 1 teas. Vanilla
  • ¾ teas. Baking Powder
  • ½ teas. Salt
  • Frosting
  • 3 Cups Powdered Sugar
  • 4 Tbsp. Butter
  • 4 Tbsp. Hazelnut Spread
  • 2 Tbsp. Milk

Instructions

  1. Preheat oven to 375˚.
  2. In a medium bowl cream together Sugar and Butter.
  3. Add Vanilla and Egg beat until well combined
  4. Add Peanut Butter mix until combined.
  5. Add Flour, Salt and Baking Powder.  Mix until dough forms.
  6. Roll out on lightly dusted counter or wax paper to about ¼ inch thick.  Cut out rounds with a cookie cutter.  Dimple the cookies in the center. Place on lightly greased or non-stick cookie sheet.
  7. Bake at 375˚ until they just start to brown on the sides, approximately 10 minutes.
  8. Remove and let cool completely.
  9. In another bowl using an electric mixer beat together the Powdered Sugar, Butter, Hazelnut Spread and milk to make a frosting. If it is too thick add 1 teas. of milk at a time until it reaches desired thickness.
  10. Spoon or pipe desired amount of frosting onto cookies.

 

Serve or store in single layer in air tight container in a cool place.

    Delicious – I’m all about that flavor combination. I’ve done something similar with Nutella sandwiched between peanut butter cookies.

    I would never have thought of hazelnut frosting for a peanut butter cookie. We usually make peanut butter kiss cookies or plain peanut butter cookie.

    Hazelnut is the most wonderful thing I could put in my mouth, so it’s a little dangerous, but soooooo good. I have to get it in small amounts or I’ll eat it all up, so if I ever visit and you have some to offer, you aren’t allowed to offer more than two max 😉
