    This Paleo Whole 30 Sweet Potato Chicken Nuggets Recipe may seem like quite a bit of work, but it really isn't - and the taste is utterly delicious.

    What Are Whole30 Chicken Nuggets?

    Have you heard of the Whole30 eating plan? It is kind of a one-month eating challenge where you eat only whole foods and don't eat or drink any refined sugar or grains. Chicken nuggets are typically breaded in flour, so that makes them off-limits on Whole30, right? Yes, sadly. That is...unless you make them with whole foods!

    I coated chicken bites in a combination of spices, sweet potatoes, and coconut flour. The results is a crispy, flavorful nugget that rivals takeout! And the best part is that these chicken nuggets are good for you too!

    I have found over the last 15+ years of following a low carb lifestyle - for the most part, anyway - that once you make a substitution, you get used to it and do not feel that you are missing out on really good food!

    While I do not usually share that many low carb recipes, I keep telling myself that I need to get into the habit, because I have been following a low carb lifestyle ever since I found out about the Atkins Diet almost 20 years ago!

    How to make Paleo Whole 30 Sweet Potato Chicken Nuggets

    This paleo whole 30 sweet potato chicken nuggets recipe will make 28 nuggets. It takes 10 minutes to prep the ingredients and 27 minutes to cook. You'll be ready to eat delicious healthy chicken nuggets in less than 40 minutes!

    Ingredients

    All the exact ingredient amounts are in the printable recipe card. First, here is what you'll need from the store.

    • Ground chicken 
    • 2 cups fFinely shredded sweet potato (about 2-3 sweet potatoes) 
    • Coconut oil 
    • Coconut flour 
    • Green onion sprigs, finely chopped 
    • Garlic powder 
    • Onion powder 
    • Chili powder 
    • Salt

    Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and set aside. 

    In a large bowl, add all ingredients and use clean hands to fully incorporate. 

    Ground chicken, sweet potato mash, and spices in a mixing bowl

    Using a measuring tablespoon, scoop out the mixture and roll it into a ball before flattening and shaping it into nuggets. Place on the baking sheet.

    Bake nuggets in the preheated oven for 24-27 minutes, and flip half way through to lightly brown both sides. 

    Allow nuggets to cool for 5-10 minutes before serving.

    What To Eat With Healthy Chicken Nuggets

    The nuggets pair well with guacamole or paleo approved ranch for dipping .

    How To Freeze Homemade Chicken Nuggets

    Follow instructions as written. Place cooled nuggets in freezer bag or container and freeze. When ready to eat, remove from freezer and place on a baking sheet. Bake in a 400 degree oven for 10-12 minutes. Cool before serving.
