Oatmeal Walnut Apple Sour Cream Bars Recipe
These cream apple oatmeal bars are such a unique spin on apple bars! We love using sour cream in baking recipes because it adds such a rich, moist texture to the goodies!
You're going to love sinking your teeth into a luscious blend of apples and the rich, velvety cream filling!
With every bite, you'll be in total apple heaven! Even if you don't like oatmeal cookies, don't worry - these don't taste like oatmeal at all!
We use the oats to create the density and they absorb all of that apple goodness so well!

Oatmeal Walnut Apple Sour Cream Bars Recipe
For the Crust
- 1 cup softened butter
- 1 cup packed brown sugar
- 2 cups oatmeal (quick cooking is fine)
- 1 cup flour
- 1 cup chopped walnuts
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
For the Apple Filling
- 1 cup sour cream (light is fine)
- ¾ cup white sugar
- 2 tablespoons flour
- 1 egg
- 2 cups apples, shredded (leave the peel on, it's about 2 apples) I use my food processor, but you could also grate them

Directions for how to make our Oatmeal Walnut Apple Sour Cream Bars Recipe
Heat Oven to 350. Combine butter and brown sugar in a mixing bowl and mix until creamy, usually about 3-5 minutes.
Scrape bowl down a few times to ensure even whipped mixture.
Add oatmeal, flour, walnuts, baking soda and cinnamon. Mix until combined.
Press half of the crust mixture into the bottom of an ungreased 13x19 pan.
Bake 8-12 minutes or until golden brown.
Combine all filling ingredients and mix well by hand.
Spoon over the hot crust and spread evenly.
Flatten the remainder of the crust in small chunks in the palm of your hand and place on the filling.
Bake at 30-35 minutes until top is golden brown and center is set. Cool completely before cutting. Store in the fridge.
