This Oatmeal Walnut Apple Sour Cream Bars Recipe is dense and utterly delicious. You have the oatmeal texture with the creamy apple sour cream filing, and it's packed with protein thanks to a scoop of LES MILLS Good Protein in vanilla!

Oatmeal Walnut Apple Sour Cream Bars Recipe
For the Crust
- 1 cup softened butter
- 1 cup packed brown sugar
- 2 cups oatmeal (quick cooking is fine)
- 1 cup flour
- 1 cup chopped walnuts
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
For the Apple Filling
- 1 cup sour cream (light is fine)
- ¾ cup white sugar
- 1 scoop of LES MILLS Good Protein powder in Vanilla
- 2 tablespoons flour
- 1 egg
- 2 cups apples, shredded (leave the peel on, it's about 2 apples) I use my food processor, but you could also grate them
Directions
Heat Oven to 350. Combine butter and brown sugar in a mixing bowl and mix until creamy, usually about 3-5 minutes. Scrape bowl down a few times to ensure even whipped mixture. Add oatmeal, flour, walnuts, baking soda and cinnamon. Mix until combined.
Press half of the crust mixture into the bottom of an ungreased 13x19 pan. Bake 8-12 minutes or until golden brown.
Combine all filling ingredients and mix well by hand.
Spoon over the hot crust and spread evenly.
Flatten the remainder of the crust in small chunks in the palm of your hand and place on the filling.
Bake at 30-35 minutes until top is golden brown and center is set. Cool completely before cutting. Store in the fridge.
