This Oatmeal Walnut Apple Sour Cream Bars Recipe is dense and utterly delicious. You have the oatmeal texture with the creamy apple sour cream filing, and it’s packed with protein thanks to a scoop of LES MILLS Good Protein in vanilla!
There are so many benefits to using LES MILLS Good Protein! It’s low carb, and there aren’t any added sugars or fructose – it’s just sweetened with stevia leaf extract. There are just six simple ingredients, so whether you’re adding a scoop of LES MILLS Good Protein to your smoothie, shake or a baking recipe like I just did, you’ll know EXACTLY what’s going into it!
LES MILLS Good Protein Ingredients Include:
- Milk protein concentrate (whey and casein proteins from the milk of grass-fed cows)
- Stevia leaf extract
- Natural flavors
- Guar gum
The sixth ingredient? Either vanilla or cocoa – depending on which flavor you purchase!
One of the things I really appreciate about LES MILLS Good Protein is that they use ethically sourced protein from grass-fed cow’s milk. There aren’t any fillers, just a complete protein with both casein and whey.
Oatmeal Walnut Apple Sour Cream Bars Recipe
For the Crust
- 1 cup softened butter
- 1 cup packed brown sugar
- 2 cups oatmeal (quick cooking is fine)
- 1 cup flour
- 1 cup chopped walnuts
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
For the Apple Filling
- 1 cup sour cream (light is fine)
- 3/4 cup white sugar
- 1 scoop of LES MILLS Good Protein powder in Vanilla
- 2 tablespoons flour
- 1 egg
- 2 cups apples, shredded (leave the peel on, it’s about 2 apples) I use my food processor, but you could also grate them
Heat Oven to 350. Combine butter and brown sugar in a mixing bowl and mix until creamy, usually about 3-5 minutes. Scrape bowl down a few times to ensure even whipped mixture. Add oatmeal, flour, walnuts, baking soda and cinnamon. Mix until combined.
Press half of the crust mixture into the bottom of an ungreased 13×19 pan. Bake 8-12 minutes or until golden brown.
Combine all filling ingredients and mix well by hand.
Spoon over the hot crust and spread evenly.
Flatten the remainder of the crust in small chunks in the palm of your hand and place on the filling.
Bake at 30-35 minutes until top is golden brown and center is set. Cool completely before cutting. Store in the fridge.
