This Ham and Asparagus Skillet Recipe is an easy skillet meal with good flavor, as all of the veggies, pasta and ham combine to create a symphony of flavor! I love pasta dishes, they are a staple in my home, and have been ever since I moved out on my own.

Spaghetti is just one of the easiest meals that you can prepare, and most people always have at least a box of pasta and a jar of marinara sauce in their kitchen cabinet or pantry at all times...

Pasta was the first thing that I taught Angeline to cook, and now that she is 21, she comes up with all sorts of tasty pasta dinners!

This Ham and Asparagus Skillet recipe is very easy to make, the longest part of the instructions are cooking the pasta! This recipe was inspired by our One Pot Sweet Potato and Pear Chicken Recipe. We can't get enough of one pot meals!

You could even make this recipe much faster by buying that precooked pasta that are now on the shelves of your local supermarket, so that you can skip the "cooking" of the pasta entirely.

Quick and Easy Weeknight Meal Tip

Once a week, boil a pot of pasta and put it into a Ziploc bag. Keep it in the fridge so that you always have pasta that is ready to go for super fast dinner recipes - or to make a quick and easy pasta salad for lunches!

An ex boyfriend used to do this and I was so surprised, as I had never thought to make pasta ahead of time just to have on hand. It stays good for about a week before it starts to break down.

All you have to do is throw it into the sauce as it simmers to warm it up, and it is good to go! You can also freeze a Ziploc bag full of cooked pasta and just run it under hot water to defrost it when you need a quick pasta dinner.

Can You Substitute Other Veggies in this Ham and Asparagus Skillet Recipe?

If you really like other veggies, you can absolutely add more vegetables like broccoli, spinach, mushrooms or other bell peppers.

I personally like this recipe just as it is, but if you are not really a fan of asparagus, you could eliminate it from the recipe and it will still be tasty!

Can I Make This Ham and Asparagus Skillet Recipe Vegetarian?

If you don't eat meat, or just do not like pork, you can eliminate the ham from this recipe and eat it as a vegetarian dish! It would also be vegan without the ham!

Ham and Asparagus Skillet Recipe Ingredients

    • 8 ounces cooked and drained cavatappi pasta,
    • ¾lb fresh asparagus, cut into 1" pieces
    • 1 yellow pepper, thinly sliced
    • 1 tablespoon oil
    • 1 can, 15 oz, diced tomatoes
    • 1 package, 8 oz, diced ham
    • ½ teaspoon dry basil
    • ½ teaspoon salt
    • ½ teaspoon dry oregano
    • ¼ teaspoon pepper
    • fresh parsley for garnish (if desired)

Ham and Asparagus Skillet Recipe Directions

In a large skillet, add in your asparagus, pepper and oil and bring it to a simmer over over medium heat for about 5-7 minutes, or until the yellow peppers are tender.

Next, you are going to add in your tomatoes, ham and seasoning and continue to heat until everything is warmed all the way through.

Note that the asparagus will not become as tender as the yellow peppers, as they are harder to begin with. They will soften up but remain crispy and crunchy - exactly how asparagus should be!
