    Ground Beef and Sweet Potato

    This Ground Beef and Sweet Potato recipe is healthier than a loaded baked potato and perfect for folks who love sweet potatoes and ground beef. Our Sweet Potato Ground Beef recipe is an entire meal in a one pot dinner, and the flavor combinations are just perfect! The ground beef filling is sweet and smoky, with paprika, tomato paste, and Italian seasoning.

    Baked sweet potatoes are a fun twist for dinner. You can make them as sweet as you want (but with this ground beef topping, it's probably best to leave the brown sugar out). Plus, they cook so much faster than white potatoes. This is a simple recipe that's ready in 45 minutes.

    Why I Love This Ground Beef and Sweet Potato Recipe

    This is the best way to eat a baked sweet potato, and adjusting to your tastes is really easy. The first time I made it, I used too much tomato paste (a whole can), so I made some adjustments to this recipe, which I think will improve it.

    Do you like your recipes saltier? Then, add your preferred amount to the ground beef. I should have trusted my gut and seasoned this with a set amount of salt and pepper (like one teaspoon salt, ½ teaspoon pepper) versus shaking salt and pepper on the beef. It needed salt, so I'm adjusting the recipe below to reflect that. 

    The sweet potatoes I used were in a bag/bulk which is always smaller than sweet potatoes you pick one-by-one. Therefore, the amount of sweet potatoes you need may vary. If you have leftover beef, you can always refrigerate it and whip up additional sweet potatoes the next day.

    How To Make Ground Beef and Sweet Potato

    To make this simple ground beef and sweet potato recipe, you'll just grab some ground beef, tomato paste, and a bunch of spices that you probably have in your pantry. Fry it up in the skillet, bake the sweet potatoes, the add the ground beef and it's time to eat!

    Directions For How To Make Ground Beef and Sweet Potatoes

    This baked sweet potato with ground beef recipe only takes about 45 minutes to complete, and it's so easy even beginners can make it. When you're all done, you'll have a steamy sweet potato topped with a zesty and cheesy ground beef mixture that will make you want to save extras for leftovers.

    Preheat oven. Wash and poke holes in each sweet potato. Wrap in foil and place onto a baking sheet. Bake for 40 minutes.

    Remove from oven and carefully unwrap sweet potatoes from foil. Let stand to cool slightly. 

    Add beef, onion, and garlic to a large skillet. Heat over medium-high heat, stirring frequently, until the beef is browned and no longer pink.

    Drain grease. Season with paprika, italian seasoning, salt and pepper.

    Stir in tomato paste and water and mix, continuing to heat over medium-low heat until combined well.

    Stir in spinach and continue to cook for 1-2 minutes. 

    Slice each sweet potato in half and squeeze open. fluff sweet potato in the skin with a fork.

    Top your ground beef sweet potatoes with - DUH - with your ground beef mixture and cheese.

    Place into a warm oven until cheese is melted.

    Top with chopped fresh cilantro and serve. 

    It tastes best when you mix the beef with the sweet potato when you eat it. These are pretty good. They have good flavor and are a good combo. 

    Substitutions and Variations Of Our Stuffed Sweet Potatoes

    • Make it in a baked white potato.
    • Use ground turkey, chicken or sausage.
    • Leave the spinach out if you prefer.
    • Add hot sauce for some heat.

    • 6-8 sweet potatoes
    • 1 lb ground beef
    • ½ cup red onion chopped
    • 1 tablespoon minced garlic

      This is a great recipe and I really wanted to use it except it took me awhile to find the recipe between the images that really slow down scrolling. A "jump to recipe" would be helpful and make your images smaller or less. You are competing with all the ads and it's doesn't make for a pleasant visit.
