Why I Love This Ground Beef and Sweet Potato Recipe
This is the best way to eat a baked sweet potato, and adjusting to your tastes is really easy. The first time I made it, I used too much tomato paste (a whole can), so I made some adjustments to this recipe, which I think will improve it.
Do you like your recipes saltier? Then, add your preferred amount to the ground beef. I should have trusted my gut and seasoned this with a set amount of salt and pepper (like one teaspoon salt, ½ teaspoon pepper) versus shaking salt and pepper on the beef. It needed salt, so I'm adjusting the recipe below to reflect that.
The sweet potatoes I used were in a bag/bulk which is always smaller than sweet potatoes you pick one-by-one. Therefore, the amount of sweet potatoes you need may vary. If you have leftover beef, you can always refrigerate it and whip up additional sweet potatoes the next day.

Directions For How To Make Ground Beef and Sweet Potatoes
This baked sweet potato with ground beef recipe only takes about 45 minutes to complete, and it's so easy even beginners can make it. When you're all done, you'll have a steamy sweet potato topped with a zesty and cheesy ground beef mixture that will make you want to save extras for leftovers.

Preheat oven. Wash and poke holes in each sweet potato. Wrap in foil and place onto a baking sheet. Bake for 40 minutes.
Remove from oven and carefully unwrap sweet potatoes from foil. Let stand to cool slightly.
Add beef, onion, and garlic to a large skillet. Heat over medium-high heat, stirring frequently, until the beef is browned and no longer pink.
Drain grease. Season with paprika, italian seasoning, salt and pepper.
Stir in tomato paste and water and mix, continuing to heat over medium-low heat until combined well.
Stir in spinach and continue to cook for 1-2 minutes.
Slice each sweet potato in half and squeeze open. fluff sweet potato in the skin with a fork.
Top your ground beef sweet potatoes with - DUH - with your ground beef mixture and cheese.
Place into a warm oven until cheese is melted.
Top with chopped fresh cilantro and serve.
It tastes best when you mix the beef with the sweet potato when you eat it. These are pretty good. They have good flavor and are a good combo.

- Make it in a baked white potato.
- Use ground turkey, chicken or sausage.
- Leave the spinach out if you prefer.
